Description

With the Thermomix® sourdough bread Katrin, an aromatic bread made from starter, water, flour type 550 and salt succeeds. The recipe is ideal for anyone who enjoys baking their own bread and loves the authentic taste of sourdough. The preparation time is a total of 180 minutes, the active working time is about 30 minutes. The recipe yields one bread. Perfect for a hearty breakfast or as a side dish for dinner.

Ingredients (4 ingredients)

  • 240 g Starter
  • 560 g Water
  • 800 g Flour type 550
  • 24 g Salt

Preparation (3 steps)

Feed starter

Always feed starter 1 : 1 : 1 every 24 hours. Unless you want to bake the following day then 1 : 2 : 2 depending on the amount. Feed with organic spelt wholemeal flour.

Prepare dough

Knead starter, water and flour well. Let rest for 1 hour in a warm place. Add salt and a splash of water and "Stretch & Fold" with damp hands. Let rest for 30min. 3x "Coil Fold" with 30 min intervals each. Flour the surface. Pull dough into a square at all 4 corners. Then fold the left and right thirds to the middle and roll up the dough lengthwise. Shape the dough (push up and pull down in circular motions) Turn into the proofing basket and "sew". Let rise for 12-24 hours in the refrigerator.

Bake bread

Turn the dough onto baking paper and make a relief cut. Preheat the oven with the cast iron pot to 250°C top and bottom heat. Take the pot out of the oven and place the dough in the pot on the baking paper. Put 3 ice cubes under the baking paper for the steam. Bake bread with lid for 15min at 250°C. Then bake for 20-30min without lid at 230°C. Cool for 1 hour and enjoy.
