Description

This is a dish I often prepare when I have little time but want something tasty and different from the usual. The soy chicken morsels are perfect for a quick and flavorful dinner. The soy sauce gives the chicken an irresistible sweet and sour taste, while the grated ginger adds a fresh and aromatic note. Served with fresh spring onions and sesame seeds, these morsels are a true pleasure for the palate. Ideal for those who love Asian cuisine and strong flavors!

  • 500 g chicken morsels
  • 40 g rice flour
  • 30 ml seed oil
  • 40 ml soy sauce
  • 150 ml water
  • 1 q.b. freshly grated ginger
  • 1 q.b. spring onions
  • 1 q.b. sesame seeds

Chicken in rice flour

Pass the chicken morsels in the rice flour, making sure they are well covered on all sides. This step is essential to obtain a golden and crispy crust.

Add the floured chicken morsels to the bowl and cook for 5 Min./Varoma/Stufe 1/Linkslauf. Make sure the chicken is well browned on all sides.

Deglaze with soy sauce

Add the soy sauce and water to the bowl. Cook for 10 Min./100°C/Stufe 1/Linkslauf. Stir occasionally with the spatula to prevent the chicken from sticking to the bottom.

About this recipe

Soy chicken morsels are a dish I learned to prepare a bit by chance, inspired by the flavors that remind me of travels in Asia. I don't have a real family history linked to this recipe, but it has become a staple in my kitchen when I want something quick, comforting and with an exotic touch. I like to think it's my personal interpretation of an oriental cuisine classic, adapted to the tastes and ingredients I have available. Each ingredient has a very specific role in this dish. The chicken morsels, of course, are the protein base. I always try to use good quality chicken breast, cut into cubes of similar sizes to ensure even cooking. Rice flour is essential to obtain a light and crispy crust, much more delicate than wheat flour. Seed oil, preferably peanut or sunflower, is used to brown the chicken and release the aromas of ginger. Soy sauce is the soul of the dish, giving it that characteristic sweet and sour taste. I use a naturally fermented soy sauce, which has a richer and more complex taste. Water is used to dilute the soy sauce and create a light sauce. Freshly grated ginger adds a spicy and aromatic note that balances the sweetness of the soy sauce. Finally, fresh spring onions and sesame seeds are the final touch, for a touch of freshness and crispness. For preparation with the Thermomix®, it is important to follow the order of the ingredients. Starting with the grated ginger in the hot oil allows you to best release its aroma. When adding the floured chicken, it is essential to use the "Linkslauf" (reverse rotation) function to prevent it from breaking during cooking. During cooking with the soy sauce, stir occasionally with the spatula to prevent the chicken from sticking to the bottom of the bowl. If the sauce is too liquid, you can prolong the cooking for a few minutes, always with the "Linkslauf" function, to thicken it slightly. For a vegetarian or vegan version, you can replace the chicken morsels with diced tofu or sliced ​​champignon mushrooms. In this case, it is advisable to marinate the tofu or mushrooms in the soy sauce for at least 30 minutes before cooking them. You can also add other vegetables, such as sliced ​​peppers or sliced ​​carrots, for a more complete dish. As for the spices, you can add a pinch of chili powder for a spicy touch, or a teaspoon of honey for a sweeter flavor. Soy chicken morsels are served hot, garnished with the green part of the spring onion cut into rounds and a sprinkling of white sesame seeds. They are excellent accompanied by boiled basmati rice, stir-fried rice noodles or steamed vegetables. They can also be served as an appetizer, skewered on sticks. If there are any leftovers, the soy chicken morsels can be stored in the refrigerator, in an airtight container, for a maximum of 2 days. They can be reheated in a pan or in the microwave. They can also be prepared in advance and stored in the refrigerator until ready to cook. In this case, it is advisable to add the soy sauce only when cooking.
