Description

This Andean chicken stew, also known as Spicy Chicken, is a comforting and flavorful dish, perfect for cold days. The combination of tender chicken, fresh vegetables and a spicy touch of yellow pepper and panca pepper makes it a unique culinary experience. I have been preparing it for years and it is always a success at home. It is ideal for a family meal or a special dinner. In addition, it is a very nutritious and balanced recipe. Go ahead and try it and discover the flavors of Peru! It is traditionally served with white rice.

Ingredients (13 ingredients)

  • 1 piece breast
  • 1 piece red onion
  • 3 piece carrots
  • 2 piece white potatoes
  • 100 gramos peas
  • 3 dientes garlic
  • 2 cucharadas soperas yellow pepper
  • 1 cucharada sopera panca pepper
  • to taste ground black pepper
  • chicken broth
  • chopped parsley
  • oil
  • salt

Preparation (9 steps)

Preparation of the vegetables

Peel and cut the carrots into cubes of approximately 2 cm. Reserve in a bowl. Peel and cut the white potatoes into cubes of approximately 2 cm. Place the potatoes in another bowl with cold water until covered.

Chopping onion and garlic

Finely chop the red onion and garlic cloves. Place the onion in the bowl and chop 3 sec./Stufe 5. Remove and reserve. Place the garlic in the bowl and chop 3 sec./Stufe 7. Remove and reserve.

Chopping the chicken

Cut the chicken breast into strips approximately 2 fingers thick and then into regular cubes. Season with salt and pepper to taste.

Browning the chicken (outside the Thermomix)

Heat a large pot with oil. Brown the chicken cubes on all sides without cooking them completely. Keep the heat very high to prevent them from overcooking. Reserve the chicken.

Sautéing the onion

In the bowl, add oil and the chopped onion. Sauté 3 Min./120°C/Stufe 1.

Adding garlic and peppers

15 min/248°F/Speed 1 120

Add the chopped garlic, yellow pepper and panca pepper to the bowl. Cook 15 Min./120°C/Stufe 1, stirring with the spatula from time to time, until the dressing has a consistency similar to that of a jam.

Cooking the vegetables

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the potatoes, carrots and peas to the bowl. Cover with chicken broth. Add salt to taste. Cook 10 Min./100°C/Stufe 1 or until the potatoes are al dente.

Adding the chicken

Thermomix® Setting
2 min/212°F/Speed 1 100

Add the diced chicken to the bowl, mix well and let it boil 2 Min./100°C/Stufe 1 so that it heats up and finishes cooking.

Serve

Correct the seasoning, incorporate finely chopped parsley and serve accompanied with a portion of rice.
