Description

This spicy sweet potato and black bean stew is a hearty and flavorful dish perfect for a chilly evening. I've been making this recipe for years, and it's always a hit! The combination of sweet potatoes, black beans, and jerk seasoning creates a unique and delicious flavor profile. It's also incredibly easy to make, especially with the help of the Thermomix®. This stew is naturally vegetarian and can easily be made vegan. It's also gluten-free, making it a great option for those with dietary restrictions. Feel free to adjust the amount of jerk seasoning to your liking – I like mine with a bit of a kick!

Ingredients (13 ingredients)

  • 2 piece onions
  • 2 tbsp sunflower oil
  • 50 g ginger
  • 1 small bunch coriander
  • 3 tbsp jerk seasoning
  • 2 piece thyme
  • 400 g can chopped tomato
  • 4 tbsp red wine vinegar
  • 3 tbsp demerara sugar
  • 2 cube vegetable stock
  • 1 kg sweet potato
  • 2 can black beans
  • 450 g jar roasted red pepper

Preparation (8 steps)

Chop the onions

Thermomix® Setting
3 sec/Speed 5

Peel and quarter the onions. Place them into the mixing bowl and chop for 3 Sec./Stufe 5.

Sauté the onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the sunflower oil to the mixing bowl and sauté for 3 Min./120°C/Stufe 1.

Prepare the jerk seasoning paste

Thermomix® Setting
10 sec/Speed 7

Roughly chop the ginger and coriander stalks. Add them to the mixing bowl along with the jerk seasoning. Blend for 10 Sec./Stufe 7.

Cook the spice paste

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the spice paste to the onions in the mixing bowl and cook for 3 Min./120°C/Stufe 1.

Add remaining ingredients

10 min/212°F/Speed 1 100

Add the thyme, chopped tomatoes, red wine vinegar, demerara sugar, vegetable stock cubes, and 600ml water to the mixing bowl. Cook for 10 Min./100°C/Stufe 1.

Add sweet potatoes

Thermomix® Setting
10 min/212°F/Speed 1 100

Peel and dice the sweet potatoes. Add them to the mixing bowl and cook for 10 Min./100°C/Stufe 1.

Add beans and peppers

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the black beans (drained and rinsed) and roasted red peppers (drained) to the mixing bowl. Season with salt and pepper. Cook for 5 Min./100°C/Linkslauf Stufe 1.

Serve

Roughly chop most of the coriander leaves and stir into the stew. Serve scattered with the remaining leaves.
