Chop onion (dumplings)

Prepare dumpling dough

Prepare broth

Spicy ground meat dumplings in caper sauce - a dish that awakens childhood memories for me. My grandma, a true Berliner, always prepared these dumplings on Sundays. The smell that then wafted through the whole house was simply unmistakable. She lovingly called them "fake caper dumplings" because, unlike Königsberger Klopse, they were not prepared with veal, but with ground meat. And the capers, of course, were the icing on the cake. The quality of the ingredients is crucial for the taste. The ground meat should best be from the butcher you trust. A mixture of beef and pork ensures a balanced balance between spice and juiciness. The bread roll, ideally from the day before, serves as a binding agent and makes the dumplings nice and loose. The onion brings a pleasant sharpness and sweetness to the dough. The anchovy paste, just a small dab, provides a subtle, umami-rich note that enhances the dish. The parsley contributes freshness and color. The Thermomix® is a true helper here. Shredding the onion is lightning fast and even. When mixing the dough, it is important not to mix for too long, otherwise the dumplings can become tough. Make sure that the bread roll is well squeezed out before adding it to the dough. When cooking the dumplings in the simmering basket, they remain nice and juicy and do not fall apart. The broth in which the dumplings are cooked is the basis for the sauce. Here it is worth using a high-quality meat broth. The capers, of course from the jar, bring the typical sour-salty note. The cream ensures creaminess and softens the acidity of the capers. A splash of lemon juice and a pinch of sugar round off the taste. For a vegetarian version, you can replace the ground meat with a mixture of lentils, mushrooms and nuts. Use vegetable broth instead of meat broth. For a vegan version, replace the cream with cashew cream or another plant-based alternative. Also experiment with other spices. Caraway, marjoram or nutmeg go perfectly with ground meat dumplings. Serve the spicy ground meat dumplings in caper sauce with salted potatoes, mashed potatoes or rice. A fresh salad also goes well with it. I recommend red cabbage or green beans as a side dish. Garnish the dish with fresh parsley and a lemon wedge. The dumplings and sauce can be prepared well in advance. You can form the dumplings the day before and keep them in the refrigerator.
