Description

This strawberry curd roll is a real eye-catcher on any coffee table! The loose sponge cake, combined with a creamy curd filling and fresh strawberries, makes it an irresistible treat. I especially like to make it in the spring when the strawberries are in season. The preparation is a bit more complex, but the result is worth it. The roll can be prepared well in advance and tastes delicious even the next day. A perfect dessert for special occasions or just to indulge!

Ingredients (11 ingredients)

  • 4 piece Eggs (Gr. M)
  • 1 pinch Salt
  • 100 g Sugar
  • 1 etwas Sugar
  • 2 packet Cake glaze
  • 90 g Flour
  • 250 g Strawberries
  • 500 g Low-fat curd
  • 270 g Strawberry fruit spread
  • 2 tbsp Sugar
  • 300 g Confectioner's cream

Preparation (10 steps)

Separate eggs and beat egg whites

Thermomix® Setting

Separate eggs. Add egg whites with 1 pinch of salt to the mixing bowl and whisk with butterfly 3 Min./level 3.5 until stiff. Pour in 100 g sugar while doing so.

Add egg yolks and cake glaze

Thermomix® Setting
10 sec/Speed 2

Add egg yolks and continue whisking briefly for 10 sec./level 3. Mix cake glaze with 3 tbsp water and fold into the egg white mixture for 10 sec./level 2.

Fold in flour

Add 90 g flour and carefully fold in with a spatula. Spread dough on a baking sheet lined with baking paper.

Bake sponge cake

Bake in a preheated oven (electric oven: 220°C/convection oven: 200°C/gas: see manufacturer) for approx. 8 minutes.

Turn out and roll up sponge cake

Remove and immediately turn out onto a tea towel sprinkled with a little sugar. Carefully peel off the baking paper. Roll up the sponge cake loosely from the long side with the help of the tea towel. Let cool.

Prepare strawberries

Wash, clean and, depending on size, quarter or eighth the strawberries.

Prepare curd cream

Thermomix® Setting
20 sec/Speed 3

Put low-fat curd with 2 tbsp fruit spread and 2 tbsp sugar into the mixing bowl and stir until smooth for 20 sec./level 3.

Whip cream and fold in

Thermomix® Setting
2 min/Speed 3.5

Add confectioner's cream to the mixing bowl and whip with butterfly for 2 Min./level 3.5 until stiff. Carefully fold the cream into the curd mixture. Swirl about 3 tbsp of fruit spread into the cream.

Fill and roll up sponge cake

Unroll sponge cake. Spread the remaining fruit spread on the previous baking paper side and spread approx. 2/3 of the cream on top, leaving an approx. 5 cm wide edge free on the rear long side. Distribute about half of the strawberries on the cream.

Finish and decorate roll

Roll up the sponge cake with the help of the cloth. Place the roll on a plate and spread loosely with the remaining cream. Garnish with remaining strawberries. Refrigerate briefly until serving.
