Description

This apple strudel is a rustic and fragrant dessert, perfect for a delicious snack or as a dessert after a family meal. The recipe is simple and within everyone's reach, and the result is a fragrant and flavorful strudel. I often prepare it in the autumn, when apples are at their best, and I serve it warm with a dusting of powdered sugar. A tip? Add an extra pinch of cinnamon for an even more intense aroma! The dough is homemade, but you can also use ready-made dough to speed up preparation. Ideal to enjoy with a cup of hot tea.

Ingredients (17 ingredients)

  • 250 g 00 Flour
  • 1 piece Egg
  • 80 ml Warm water
  • 30 ml Seed oil
  • 1 tbsp White wine vinegar
  • 1 pinch Salt
  • 500 g Apples
  • 80 g Sugar
  • 50 g Butter
  • 50 g Sultanas
  • 30 g Pine nuts
  • 30 g Breadcrumbs
  • 2 tbsp Lemon juice
  • 0.5 tsp Lemon zest
  • 0.5 tsp Cinnamon powder
  • 2 tbsp Brandy
  • 30 g Powdered sugar

Preparation (8 steps)

Preparation of the apples

Peel the apples, remove the core and dice them. Put them in a bowl and immediately sprinkle them with lemon juice to prevent them from browning.

Preparation of the filling

Add the grated lemon zest, pine nuts, sugar, cinnamon, breadcrumbs and well-squeezed sultanas to the apples. Mix all the ingredients well.

Preparation of the dough

Put 250 g of 00 flour, 1 egg, 80 ml of warm water, 30 ml of seed oil, 1 tablespoon of white wine vinegar and a pinch of salt into the bowl. Knead for 3 Min./Knetstufe.

Resting the dough

Remove the dough from the bowl, form a ball and wrap it in cling film. Let it rest for at least 30 minutes at room temperature.

Rolling out the dough

Take the dough again. On a floured work surface, roll it out with a rolling pin until you get a very thin sheet, rectangular in shape.

Filling the strudel

Distribute the apple filling in the center of the rectangle, leaving the edges free. First fold the bottom edge of dough over the apples and brush it with a little of the melted butter. Then fold the two short sides and brush those too. Finally, close with the upper edge, wrapping all the filling well.

Baking the strudel

Gently transfer the strudel to a baking sheet lined with parchment paper, placing it with the "closure" facing down. Make oblique cuts on the surface, then brush the whole strudel with the remaining melted butter. Bake in a preheated fan oven at 180°C for about 40-45 minutes, or until golden brown and crispy.

Service

Remove the strudel from the oven, let it cool slightly and, before serving, sprinkle it with plenty of powdered sugar.
