Description

This hearty vegetable and potato casserole from the Thermomix® is a vegetarian main course with potatoes, broccoli, bell peppers and carrots. Preparation with the Thermomix® takes about 60 minutes, with a pure working time of 30 minutes. The recipe yields 6 servings and is ideal as a hearty family meal or for anyone looking for a healthy and balanced meal. The casserole is rich in vegetables and very filling.

Ingredients (13 ingredients)

  • 700 g Firm-cooking potatoes
  • 1 Kopf Broccoli
  • 2 Stück Bell peppers - red and yellow
  • 300 g Carrots
  • 30 g Butter
  • 30 g Flour
  • 250 ml Milk
  • 250 ml Vegetable broth
  • 100 g Grated cheese
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 TL Paprika powder
  • 500 ml Water

Preparation (7 steps)

Prepare the vegetables

Preheat the oven to 200°C top and bottom heat. Peel 700 g potatoes and cut into small pieces. Divide 1 head of broccoli into florets. Cut 2 bell peppers (red and yellow) into small pieces. Cut 300 g carrots into slices.

Pre-cook potatoes and vegetables

Add 500 ml water to the mixing bowl and add 1 tsp salt. Insert the simmering basket. Place the chopped potatoes in the simmering basket. Cook for 10 min./100°C/speed 1. After 6 minutes, add the broccoli and carrots to the potatoes in the simmering basket and cook with them.

Prepare the sauce

Remove the simmering basket and empty the cooking water from the mixing bowl. Add 30 g butter to the mixing bowl and melt for 3 min./50°C/speed 2.

Make a roux

Add 30 g flour to the melted butter in the mixing bowl and sauté for 2 min./100°C/speed 2.

Finish the sauce

5 min/194°F/Speed 3 90

Add 250 ml milk and 250 ml vegetable broth to the mixing bowl and stir in for 5 min./90°C/speed 3. Season the sauce with salt, pepper and 1 tsp paprika powder. Use a spatula to push the ingredients away from the edge.

Layer the casserole

Place the pre-cooked vegetables and potatoes in a casserole dish and mix with the sauce from the mixing bowl.

Bake the casserole

Sprinkle the vegetable casserole with 100 g grated cheese and bake in the preheated oven for 30 minutes.
