  • 300 g chicken breast
  • 125 g pepper
  • 120 g pineapple
  • 100 g onion
  • 1 trocito ginger
  • 1 clove garlic
  • cornstarch
  • 1 tbsp soy sauce
  • 150 ml water
  • 60 g tomato sauce
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tsp salt

Preparation of the sweet and sour sauce

In the Thermomix bowl, add 150 ml of water, 60 g of tomato sauce, 2 tbsp of rice vinegar, 2 tbsp of soy sauce, 2 tbsp of brown sugar and 1 tsp of salt. Program 10 Min./100°C/Speed 2.

Crush garlic and ginger

Insert 1 clove of garlic and a piece of ginger into the Thermomix bowl. Crush for 3 Sec./Speed 7.

Cut and sauté onion and pepper

Cut 100 g of onion and 125 g of pepper into cubes. Add a splash of vegetable oil to the Thermomix bowl along with the onion and pepper. Sauté for 5 Min./120°C/Speed 1.

Add pineapple

Cut 120 g of pineapple into pieces. Add the pineapple to the Thermomix bowl and sauté for 1 Min./120°C/Speed 1.

Incorporate the sauce

Pour the reserved sweet and sour sauce into the Thermomix bowl. Dissolve some cornstarch in water and add it to the bowl to thicken the sauce. Program 2 Min./100°C/Speed 2.

Fry the chicken

Cut 300 g of chicken breast into large pieces. Marinate the chicken with soy sauce and coat with cornstarch. Fry the chicken pieces in a pan with plenty of vegetable oil over high heat until golden brown. Drain them on absorbent paper.

Add the chicken to the sauce

Sweet and sour chicken oriental style is a dish that reminds me of my childhood. My grandmother, who lived for many years in a Chinese community, used to prepare it for family celebrations. Although her recipe was a closely guarded secret, with time and much practice, I have managed to recreate a very similar flavor, adapting it to the facilities offered by the Thermomix®. The key to this dish lies in the perfect balance between sweet, sour and salty flavors. The chicken breast, cut into generous pieces, provides the protein and meaty texture. The cornstarch batter, in addition to giving it a crispy touch when frying, helps the sauce adhere better. The pepper and onion, diced, add a touch of freshness and a slight sweetness that complements the acidity of the sauce. The pineapple, with its tropical flavor and juicy texture, is an essential ingredient that provides a delicious contrast. The ginger and garlic, finely crushed, are responsible for giving it that characteristic oriental touch. For preparation in Thermomix®, it is important to respect the times and temperatures indicated for each step. When sautéing the onion and pepper, make sure they are soft but not burnt. The pineapple should be sautéed briefly to retain its texture and flavor. When adding the cornstarch dissolved in water to the sauce, do it little by little and stirring constantly to avoid lumps. If you prefer a thicker sauce, you can add a little more cornstarch. This dish allows many variations. For a vegetarian or vegan version, you can substitute the chicken with firm tofu cut into cubes and marinated with soy sauce and grated ginger. You can also add other vegetables such as carrot, broccoli or mushrooms. As for the spices, you can experiment with different types of chilies to give it a spicy touch, or add a little toasted sesame to enhance the oriental flavor. Sweet and sour chicken oriental style is traditionally served with white basmati rice, which absorbs the sauce and complements the flavors.
