Description

These chicken croquettes are a reinvented classic with the Thermomix®. The recipe is simple, but the result is spectacular: creamy croquettes on the inside and crunchy on the outside. I often prepare them for family gatherings or as a delicious snack. The secret is in the béchamel, which should be smooth and without lumps. Go ahead and try them, I assure you you won't regret it! They are perfect for using leftover roast or boiled chicken. Also, you can freeze them before frying to always have them on hand. An irresistible bite that everyone will love!

Ingredients (10 ingredients)

  • 1 clove Garlic
  • 0.5 piece Onion
  • 30 ml Oil
  • 300 g Minced Chicken Meat
  • 1 pinch salt
  • 1 bunch Fresh Parsley
  • 500 ml Milk
  • 100 g Flour
  • 1 piece Egg
  • 100 g Breadcrumbs

Preparation (8 steps)

Chop garlic and onion

Insert 1 clove of garlic into the glass and chop 3 Sec./Level 7. Add half an onion and chop 3 Sec./Level 5.

Sauté garlic and onion

Add 30 ml of olive oil to the glass and sauté 3 Min./120°C/Level 1.

Add parsley and chicken

Thermomix® Setting
5 min/248°F/Giro a la izquierda/Speed 1 120 Reverse

Add a little chopped fresh parsley and 300g of minced chicken meat to the glass. Stir with the spatula and program 5 Min./120°C/Reverse direction/Level 1.

Add salt and milk

Thermomix® Setting
8 min/194°F/Speed 2 90

Add a pinch of salt and 500 ml of milk to the glass. Program 8 Min./90°C/Level 2.

Add flour

Thermomix® Setting
10 min/212°F/Speed 4 100

Add 100g of flour little by little to the glass and program 10 Min./100°C/Level 4. Stir with the spatula to prevent it from sticking.

Cook the dough

Thermomix® Setting
5 min/212°F/Speed 2 100

Let the dough cook for 5 Min./100°C/Level 2 so that it becomes a little more.

Cool the dough

Pour the dough into a bowl and let it cool completely before forming the croquettes.

Form and fry the croquettes

Once the dough is cold, form the croquettes, dip them in beaten egg and breadcrumbs. Fry in abundant hot oil until golden brown.
