Description

This recipe for Ta'amia, the Egyptian version of falafel, is an absolute highlight! The crispy balls made from fava beans, fresh herbs and spices are incredibly aromatic. Served on a refreshing red cabbage coleslaw with a creamy tahini dip, this creates a perfect combination of textures and flavors. I like to make the ta'amia for a light lunch or as part of a buffet. The preparation takes some time, as the beans have to be soaked overnight, but the effort is definitely worth it! The salad can be prepared well in advance, so you can put everything together just before serving. A great dish for anyone who wants to try something new!

Ingredients (21 ingredients)

  • 350 g Fava beans, dried, peeled
  • 1 piece Spring onion(s)
  • 2 Zehe(n) Garlic clove(s)
  • 8 Stiele Dill
  • 8 Stiele Parsley, smooth
  • 8 Stiele Cilantro
  • 4 tbsp Sesame, white
  • 1 tsp Baking powder
  • 0.5 tbsp Coriander powder
  • 0.5 tbsp Cumin powder
  • 1 Liter Salt and pepper
  • 400 g Red cabbage
  • 100 g Kale, young (Curly Kale)
  • 1 Prise(n) Salt and pepper
  • 4 tbsp Yogurt
  • 4 tbsp Mayonnaise
  • 2 tbsp Lemon juice
  • 3 tbsp Tahin
  • 3 tbsp Lemon juice
  • 300 g Yogurt
  • 2 tbsp Salt and pepper

Preparation (8 steps)

Prepare spring onion, garlic and herbs

Clean the spring onion, wash and put the white and light green parts into the mixing bowl. Add garlic cloves. Chop for 3 sec./level 5. Pluck the dill tips, parsley and coriander leaves from the stalks and put half of them into the mixing bowl. Refrigerate the remaining herbs until serving.

Prepare herb mixture

Chop the ingredients in the mixing bowl for 5 sec./level 7 and then transfer to a bowl.

Chop the beans

Put the soaked and drained fava beans into the mixing bowl and chop into pieces for 10 sec./level 6. If necessary, push down with the spatula and repeat the process.

Mix Ta’amia mixture

Put the chopped beans in a bowl and mix with the herb mixture, sesame, baking powder, coriander powder, cumin, salt and pepper. Form into 12 equal-sized balls with moistened hands.

Prepare red cabbage

Clean, wash, pat dry the red cabbage and cut into coarse pieces. Place in the mixing bowl and chop for 5 sec./level 4. Transfer to a bowl.

Prepare kale

Clean the kale, wash and spin dry. Chop coarsely and add to the red cabbage in the bowl. Season the red cabbage and kale with salt and pepper and knead vigorously. Let it sit for about 30 minutes.

Prepare coleslaw

Mix the red cabbage and kale with yogurt, mayonnaise and lemon juice in a bowl.

Prepare tahini dip

20 sec/Speed 3

Put tahini, lemon juice, yogurt, salt and pepper into the mixing bowl and stir for 20 sec./level 3.
