Description

These grilled vegetable and avocado tacos are a vibrant and flavorful vegetarian delight, perfect for a summer barbecue or a light weeknight meal. I've been making these for years, and they're always a hit! The combination of smoky grilled vegetables, creamy avocado, and tangy lime is simply irresistible. The slight kick from the chili powder and cayenne pepper adds a delightful warmth. Feel free to add a dollop of sour cream or a sprinkle of your favorite hot sauce for an extra layer of flavor. They're quick, easy, and packed with nutrients!

Ingredients (16 ingredients)

  • 1 piece medium zucchini, cut lengthwise into 1/2-inch slices
  • 1 piece medium summer squash, cut lengthwise into 1/2-inch slices
  • 1 piece sweet onion, sliced
  • 1 piece red bell pepper, cored and cut into quarters
  • 1 piece orange or yellow bell pepper, cored and cut into quarters
  • 2 tbsp vegetable oil
  • 1 piece medium lime, halved
  • 1 tsp ground cumin
  • 0.5 tsp chili powder
  • 0.25 tsp salt
  • 0.25 tsp cayenne pepper
  • 1 piece ripe avocado, halved and pitted
  • 8 piece (6 inch) corn or flour tortillas, warmed
  • 0.5 cup crumbled cotija or feta cheese
  • 1 tsp Fresh cilantro
  • 500 ml water

Preparation (7 steps)

Prepare the vegetables

Cut the zucchini and summer squash lengthwise into 1/2-inch slices. Slice the sweet onion. Core and quarter the red and orange bell peppers. Arrange the cut vegetables on a large rimmed baking pan. Brush both sides with vegetable oil and squeeze the juice of 1/2 lime over the vegetables.

Prepare the spice mix

Combine the ground cumin, chili powder, salt, and cayenne pepper in a small bowl. Sprinkle the spice mix evenly over the vegetables.

Grill the vegetables and avocado

Heat the grill. Arrange the vegetables on the oiled grate or in a grill pan. Grill for 8 minutes, turning as necessary, until warm and tender. Add the avocado halves, cut-side down, halfway through the grilling process.

Chop the grilled vegetables

Slice the avocado

Slice the grilled avocados. Season the chopped vegetables and sliced avocados with salt and pepper, if desired.

Warm the tortillas

To warm the tortillas, place them in the Thermomix Varoma. Fill the mixing bowl with 500ml water. Steam for 5 minutes/Varoma/Stufe 1.

Assemble the tacos

Serve the chopped vegetables and sliced avocados in warm tortillas with wedges of the remaining lime. Top with cheese and garnish with cilantro.
