Description

This peach curd cake is a fruity-fresh treat that tastes especially good in summer. The combination of juicy peaches, creamy curd cream and a loose sponge base makes it an absolute highlight on every coffee table. I like to make this cake for birthdays or just because I feel like something sweet. The preparation is a bit more complex, but the result is worth it. If you like it a little lighter, you can also use low-fat curd. An absolute favorite recipe!

Ingredients (9 ingredients)

  • 2 can Peaches (240 g drained weight each)
  • 200 g Whipped cream
  • 8 Blätter Gelatin
  • 1 piece Sponge base
  • 100 g Sour cream
  • 500 g Curd (low-fat)
  • 80 g Sugar
  • 2 Pck. Cake glaze (clear)
  • 500 ml Orange juice

Preparation (9 steps)

Prepare peaches

Drain the peaches from the cans well in a sieve. Cut 4-5 peach halves into thin slices and set aside. Cut the remaining peaches into small cubes and set aside as well.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3,5

Put 200 g of whipped cream into the mixing bowl and whisk with the butterfly for 2 min./speed 3.5 until stiff. Transfer and chill.

Soak gelatin

Soak 8 sheets of gelatin in cold water according to the package instructions.

Prepare curd cream

Thermomix® Setting
20 sec/Speed 3

Put 500 g curd, 100 g sour cream and 80 g sugar into the mixing bowl and stir for 20 sec./speed 3. Transfer to a bowl.

Dissolve gelatin

Put 3 tablespoons of the curd cream in a small saucepan. Squeeze out the soaked gelatin, add it and melt over low heat while stirring. Stir well and add 2 tablespoons of the remaining cream to the gelatin, then stir the gelatin into the remaining curd cream.

Fold in cream and peaches

Carefully fold the stiff whipped cream into the curd cream. Also stir the diced peaches into the cream.

Fill and cool cake

Place a cake ring around the sponge base. Spread the curd cream on the base and smooth it out. Place the cake in the refrigerator for approx. 1 hour until the cream has set.

Prepare cake glaze

Prepare 2 packets of cake glaze with 500 ml orange juice according to the package instructions.

Decorate and finish cake

Pour the cake glaze over the firm cake and spread evenly. Fan out the sliced peaches along the edge of the cake. Place the cake in the refrigerator again for at least 15 minutes until the cake glaze is firm. Release the cake ring and cut the cake.
