Ingredients (12 ingredients)

  • 1 piece cooking spray
  • 4 piece apples - peeled, cored and sliced, peel reserved
  • 0.5 cup white sugar
  • 0.5 cup light brown sugar
  • 0.5 cup water
  • 0.25 cup brandy
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 piece pastry for 9-inch double-crust pie
  • 0.5 package corn muffin mix (8.5 ounce)
  • 0.25 cup milk
  • 4 piece nectarines, peeled and sliced

Preparation (9 steps)

Prepare the Pie Plate

Preheat oven to 425 degrees F (220 degrees C). Grease a 9-inch deep-dish pie plate with cooking spray. This step is done outside of the Thermomix.

Combine Apple Peels and Sugars

Add apple peels, ½ cup white sugar, ½ cup light brown sugar, ½ cup water, ¼ cup brandy, 1 teaspoon ground cinnamon, and 1 teaspoon vanilla extract to the Thermomix bowl.

Simmer the Mixture

Cook the mixture for 5 Min./100°C/Stufe 1 until fragrant. Use a fork to remove the apple peels from the mixture. Discard the peels.

Prepare Pie Crusts

Roll 1 crust into a 12-inch circle; place in the prepared pie plate. Roll out second crust into a 10-inch circle. Cut a few slits in the center to vent steam. This step is done outside of the Thermomix.

Mix Corn Muffin and Milk

Add ½ (8.5 ounce) package corn muffin mix and ¼ cup milk to the Thermomix bowl.

Mix Corn Muffin Batter

Mix the corn muffin mix and milk for 10 Sec./Stufe 3. Pour into pie plate.

Bake Corn Muffin Base

Bake in the preheated oven for 5 to 8 minutes. Remove from oven. This step is done outside of the Thermomix.

Layer Fruit and Pour Sugar Mixture

Layer 4 apples (peeled, cored and sliced) and 4 nectarines (peeled and sliced) on top of the corn muffin base. Pour sugar mixture slowly over fruit; cover with second crust. Press crusts together to seal; flute edges. This step is done outside of the Thermomix.

Bake the Pie

Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C). Continue baking until top crust is golden brown, 35 to 45 minutes. Let cool to room temperature before slicing, about 1 hour. This step is done outside of the Thermomix.
