Ingredients (8 ingredients)

  • 1 tablespoon butter, or as needed
  • 2 piece eggs
  • 2 tablespoons ricotta cheese
  • 0.25 cup diced tomatoes
  • 2 leaves fresh basil
  • salt and ground black pepper
  • 1 pinch dried oregano (Optional)
  • 2 teaspoons grated Parmesan cheese, or to taste

Preparation (4 steps)

Prepare the mug

Brush the inside of a microwave-safe mug with 1 tablespoon of butter.

Combine ingredients in the mug

Crack 2 eggs into the mug. Add 2 tablespoons of ricotta cheese, ¼ cup of diced tomatoes, and 2 leaves of fresh basil. Season with salt, ground black pepper to taste, and 1 pinch of dried oregano (optional).

Microwave the egg cup

Cook in the microwave for 1 minute on high. Remove and stir. Continue cooking in 15-second intervals, until set, about 1 minute more.

Sprinkle 2 teaspoons of grated Parmesan cheese over the eggs.
