Description

This revisited fish baeckeoffe is a quintessential family dish, perfect for winter evenings or festive meals. Root vegetables, like potatoes and carrots, soak up the delicate flavors of the fish and shrimp. Fresh cream and white wine provide a smoothness and richness that warms the heart. I often prepare this dish for Christmas Eve, and it is always a hit. Feel free to vary the fish according to your preferences and the season. A complete and tasty dish that will delight your guests!

Ingredients (18 ingredients)

  • 2 kg potatoes
  • 1.2 kg fish
  • 4 piece leeks
  • 500 g flour
  • 3 piece carrots
  • 1 piece onion
  • 200 g shrimp
  • 70 cl white wine
  • 60 cl liquid cream
  • 1 piece lemon
  • 4 c. à c. fish stock
  • 1 clove garlic
  • 1 bunch thyme
  • 2 feuille bay leaf
  • 1 tbsp water
  • 1 tbsp milk
  • 1 tbsp fine salt
  • 1 tbsp pepper

Preparation (7 steps)

Preparation of leeks and potatoes

Cut the leeks into rings and the potatoes into thin slices. Set aside the cut vegetables.

Preparation of carrots and garlic

Grate the carrots. Peel the clove of garlic and put it in the Thermomix bowl. Chop the garlic for 3 Sek./Stufe 7. Add the grated carrots, 2 sprigs of thyme, salt and pepper. Mix 10 Sek./Stufe 3.

Marinating the fish

Cut the fish into pieces. In a dish, mix the pieces of fish with the lemon juice and 25 cl of white wine. Marinate in the refrigerator for 6 hours.

Preparation of the sauce

Thermomix® Setting

In the Thermomix bowl, pour the rest of the white wine (45 cl), milk, liquid cream, fish stock, a little thyme, salt and pepper. Mix 20 Sek./Stufe 4. Set aside in the refrigerator.

Assembly of the terrine

Preheat the oven to 220°C. Grease a terrine. Place half of the potatoes on the bottom of the terrine. Salt, pepper and cover with thyme and bay leaf. Add the leeks, salt and pepper. Then add the carrots, salt and pepper. Arrange the marinated fish and the rest of the potatoes. Pour the milk-based preparation. Salt, pepper and cover with thyme and bay leaf.

Preparation of the dough

Thermomix® Setting

In the Thermomix bowl, pour 500 g of flour and add water gradually until a sticky dough is obtained. Mix in kneading mode for 2 Min.

Baking in the oven

Cover the lid of the terrine with the dough. Bake in the oven for 2 hours 15 minutes at 220°C. When you take it out of the oven, break the dough to lift the lid.
