Description

These savory soda bread toasts are a delightful twist on traditional pizza. I've been making them for quick lunches and brunches for years! The combination of buttery toasted soda bread, garlicky spinach, roasted red peppers, and melted mozzarella is simply irresistible. It's a fantastic way to use up leftover roasted peppers or spinach. Feel free to experiment with different toppings – cooked ham or chorizo would be delicious additions. This recipe is perfect for a light meal or a satisfying snack, and it's ready in just about 25 minutes!

Ingredients (7 ingredients)

  • 50 g butter
  • 2 tbsp olive oil
  • 2 piece soda farls
  • 2 clove garlic cloves
  • 140 g frozen spinach
  • 2 piece roasted red peppers
  • 150 g ball mozzarella

Preparation (3 steps)

Toast Soda Farl Slices

Heat a frying pan on medium heat. Add 50g butter and a little of the 2 tbsp olive oil. Once the butter stops sizzling, add the soda farl slices and cook for 1 min on each side until lightly golden. You’ll have to do this in batches. Set aside.

Sauté Garlic and Spinach

2 min/212°F/Speed 1 100

Add 1 tbsp olive oil to the Mixtopf. Add 2 garlic cloves and chop for 3 Sec./Stufe 7. Then add 140g frozen spinach and cook for 2 Min./100°C/Stufe 1, stirring often. Season to taste.

Assemble and Grill Toasts

Heat the grill to medium. Spoon the spinach mixture onto each toasted farl, then pile 2 roasted red peppers and 150g ball mozzarella on top. Season and lightly drizzle with olive oil. Pop under the grill and cook for 1-2 mins, until the cheese is bubbling. Serve immediately.
