Description

This chocolate hazelnut cake is a real treat for all chocolate lovers! I especially like to bake it in winter, when it's cold outside and you're longing for something sweet. The combination of dark chocolate and roasted hazelnuts is simply unbeatable. The cake is moist and aromatic, and the preparation with the Thermomix® is child's play. It is perfect for birthdays, Christmas or simply as a small reward in between. If you like, you can sprinkle the cake with powdered sugar or cover it with a chocolate glaze. An absolute must for all cake fans!

Ingredients (8 ingredients)

  • 100 g Butter
  • 80 g Sugar
  • 4 piece Eggs
  • 100 g Chocolate, dark
  • 1 tbsp Water
  • 220 g Hazelnuts or almonds, ground
  • 40 g Flour
  • 1 tsp Baking powder

Preparation (8 steps)

Whisk butter, sugar and egg yolks until fluffy

Put 100 g butter and 80 g sugar in the mixing bowl and whisk for 3 min./speed 4 until fluffy. Then add 4 egg yolks and mix for another 1 min./speed 4.

Melt chocolate

Put 100 g dark chocolate and 1 tbsp water in the mixing bowl and melt for 3 min./50°C/speed 2.

Add chocolate to the foam mixture

Thermomix® Setting
30 sec/Speed 3

Add the melted chocolate to the foam mixture in the mixing bowl and stir for 30 sec./speed 3.

Mix nuts, flour and baking powder

Thermomix® Setting
20 sec/Speed 3

Put 220 g ground hazelnuts or almonds, 40 g flour and 1 tsp baking powder in the mixing bowl and mix for 20 sec./speed 3.

Stir in dry ingredients

30 sec/Speed 3

Add the dry ingredients to the chocolate mixture in the mixing bowl and stir for 30 sec./speed 3. If necessary, help with the spatula.

Whisk egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Insert the butterfly. Add 4 egg whites to the mixing bowl and whisk for 3 min./speed 3.5 until stiff.

Fold in egg whites

Carefully fold the egg whites into the dough with a spatula.

Baking

Pour the dough into a greased mold and bake in a preheated oven at 180°C on the second rack from the bottom for approx. 45 minutes.
