  • 6 Stück Eggs
  • 200 g Sugar
  • 1 Pck. Bourbon vanilla sugar
  • 200 g Wheat flour Type 405
  • 1 Pck. Baking powder
  • 1 Prise Salt
  • 2 EL Cocoa powder
  • 1 TL Gingerbread spice
  • 400 g Marzipan raw material
  • 1 Dose Canned apricots
  • 450 g Apricot jam
  • 2 Tütchen Agar Agar
  • 2 Becher Cake glaze dark
  • 6 Stück Dominoes

Preparation (13 steps)

Separate and prepare eggs

Separate eggs. Put egg yolks in a bowl and egg whites in a separate bowl. Add some water to the egg yolk.

Beat egg yolks until foamy

Put egg yolks, 200 g sugar and 1 pack Bourbon vanilla sugar into the mixing bowl and beat for 3 min/speed 4 until foamy.

Beat egg white until stiff

Thermomix® Setting
3 min/keine/Speed 3.5

Add egg white with the butterfly to the mixing bowl and whisk for 3 min/speed 3.5 until stiff. Transfer.

Mix dry ingredients

Put 200 g wheat flour type 405, 1 pack baking powder, 1 pinch of salt, 2 tbsp cocoa powder and 1 tsp gingerbread spice into the mixing bowl and mix for 15 sec/speed 4. Transfer.

Prepare dough

20 sec/keine/Speed 3

Add the dry ingredients to the egg yolk and stir in for 20 sec/speed 3. Carefully fold in the stiffly beaten egg white.

Baking

Pour the dough into a springform pan (28 cm) lined with baking paper and bake in a preheated oven at 180 °C top/bottom heat for approx. 30 minutes. Let cool and cut horizontally twice.

Prepare marzipan

Divide 400 g marzipan raw material into two parts and roll out each to the size of the springform pan.

Prepare apricot jam

Drain 1 can of apricots and put them into the mixing bowl together with 450 g of apricot jam. Puree for 20 sec/speed 8.

Bring jam to a boil

5 min/212°F/Speed 2 100

Add 2 sachets of agar-agar and stir in for 5 min/100°C/speed 2. Then let cool well.

Layer cake (1st layer)

Put the bottom layer back into the springform pan. Place a rolled out marzipan base on top. Spread half of the apricot mixture on the marzipan layer and refrigerate for approx. 30 minutes.

Layer cake (2nd layer)

Place another cake base on top. Place the other marzipan layer on the base and spread with the remaining apricot mixture and refrigerate again for 30 minutes.

Prepare glaze

Heat 2 cups of dark cake glaze according to the instructions on the package in a water bath or in the microwave.

Glaze and decorate the cake

When the top layer is firm, add the third base. Pour the liquid glaze over the cake. Let cool slightly. Halve 6 dominoes diagonally and use them to decorate the cake.
