Ingredients (11 ingredients)

  • 250 g Flour
  • 200 g Butter (cold)
  • to taste Salt
  • 1 piece Egg (weight class 2)
  • 500 g Low-fat quark
  • 1 tsp Lemon juice
  • 250 g Sugar
  • 1 Crème double or Whipped cream
  • 4 piece Eggs (weight class 2)
  • 1 tbsp Flour
  • Icing sugar

Prepare shortcrust pastry

Add 250 g flour, 200 g cold butter in pieces, a pinch of salt and 1 egg to the mixing bowl and process for 2 min./kneading level to form a dough.

Shape and chill the dough

Shape the dough into a ball, wrap in aluminum foil and refrigerate for at least 1 hour.

Roll out dough and line tin

Roll out the dough on a lightly floured work surface and use it to line a tart tin (22 cm Ø), pulling the dough up and lapping it over the edge.

Pre-bake dough

Pre-bake the dough in a preheated oven on the lowest shelf at 225°C (Gas 4) for 5 minutes and let it cool slightly.

Prepare quark filling

Add 500 g low-fat quark, 1-2 tsp lemon juice, 250 g sugar, 1 Crème double or whipped cream, 4 eggs and 1 tbsp flour to the mixing bowl and mix for 30 sec./level 3.

Place filling on the dough and bake

Spread the quark mixture onto the pre-baked dough base. Bake the cake in a preheated oven on the middle shelf at 200°C (Gas 3) for 35-50 minutes.

Cool and serve cake

Let the cake cool and sprinkle with icing sugar.
