Description

This strawberry tart with pastry cream is a classic dessert that always triumphs. The crunchy base, the smooth cream and the juicy fresh strawberries make an irresistible combination. I have been preparing it for years and it is always a success at home, especially in spring, when the strawberries are at their best. It is perfect for celebrating a birthday or for enjoying a delicious dessert on any special occasion. The homemade pastry cream gives it a special touch and the shine of the gelatin enhances its beauty even more. Go ahead and prepare it, you will love it!

Ingredients (18 ingredients)

  • 500 gramos Strawberries
  • Sugar
  • 200 gramos Sifted flour
  • 2 tsp Baking powder
  • 100 gramos Sugar
  • 100 gramos Melted butter
  • 1 piece Egg yolk
  • Warm water
  • 30 gramos Cornstarch
  • 250 mililitros Milk
  • 4 tbsp Sugar
  • 1 rama Cinnamon
  • 1 pinch Vanilla essence
  • 1 piece Clove
  • 1 piece Lemon zest
  • 1 tsp Cornstarch
  • 1 container Water
  • 1 tsp Sugar

Preparation (11 steps)

Prepare the dough

Thermomix® Setting
5 Seg./Velocidad 4

In the Thermomix bowl, add the sifted flour, baking powder and sugar. Mix for 5 Sec./Speed 4.

Incorporate the butter

Thermomix® Setting
10 Seg./Velocidad 3

Add the melted butter to the bowl and mix for 10 Sec./Speed 3. The dough should have a sandy texture.

Add the yolk and water

2 min/Kneading speed

Incorporate the egg yolk into the bowl and mix for 5 Sec./Speed 3. Then, add the warm water little by little through the lid and knead for 2 Min./Kneading stage. The amount of water will depend on the flour, so add little by little until you get a consistent and smooth dough.

Roll out and bake the dough

Remove the dough from the bowl, roll it out with a rolling pin until it is 3 cm thick and place it on a previously greased 26 cm diameter mold. Cut off the excess dough and prick the base with a fork. Bake in a preheated oven at 180ºC for 15 minutes, or until golden brown. This step is performed outside the Thermomix.

Prepare the pastry cream

In the Thermomix bowl, add the cornstarch and 50 ml of cold milk. Mix for 5 Sec./Speed 4 to dissolve the cornstarch.

Cook the cream

12 min/194°F/Velocidad 2 194°F

Add the rest of the milk, sugar, cinnamon stick, vanilla essence, clove and lemon zest to the bowl. Program 12 Min./90°C/Speed 2. Remove the cinnamon stick, clove and lemon zest.

Pour the cream over the dough

Pour the hot pastry cream over the baked dough base and let cool.

Prepare the strawberries

Wash and cut the strawberries in half lengthwise. Place them in a container and sprinkle with sugar to taste. This step is performed outside the Thermomix.

Decorate the tart

When the cream has cooled, place the cut strawberries on it in a fan shape. Reserve the tart in the refrigerator until serving time.

Prepare the gelatin (optional)

5 Seg./Velocidad 3

To prepare the gelatin, add the cornstarch and water to the Thermomix bowl. Mix for 5 Sec./Speed 3.

Cook the gelatin

Thermomix® Setting
5 min/212°F/Velocidad 2 212°F

Add the sugar to the bowl and program 5 Min./100°C/Speed 2. Let cool slightly and paint the strawberries with a pastry brush.
