Description

This pudding snail cake, prepared in the Thermomix®, is a delicious yeast pastry with a pudding filling. The main ingredients are flour, fresh yeast, sugar, milk and vanilla pudding powder. The preparation time is a total of 245 minutes, of which 45 minutes are active working time, for about 12 servings. Ideal as a festive cake with coffee, for a birthday or as a sweet breakfast for the whole family.

Ingredients (11 ingredients)

  • 500 g Flour
  • 1 Würfel fresh Yeast
  • 80 g Sugar
  • 250 ml lukewarm Water
  • 80 ml Oil
  • 1 Prise Salt
  • 500 ml Milk
  • 1 Päckchen Pudding Powder Vanilla
  • 40 g Sugar (for the pudding)
  • 150 g Icing Sugar
  • 2 EL Lemon Juice

Prepare Yeast

Thermomix® Setting

Add the fresh yeast and sugar to the mixing bowl and dissolve for 2 min./37°C/speed 2.

Prepare Dough

Thermomix® Setting
3 min/Kneading speed

Add the lukewarm water, oil, salt and flour and knead for 3 min./kneading setting into a dough.

Let Dough Rise

Transfer the dough to a bowl, cover and let rise in a warm place for about 1 hour until it has doubled in size.

Prepare Pudding

Thermomix® Setting
8 min/212°F/Speed 3 212°F

Add the milk, pudding powder and sugar to the mixing bowl and cook for 8 min./100°C/speed 3 while stirring.

Let Pudding Cool

Transfer the pudding to a bowl, cover with cling film directly on the surface (prevents skin formation) and let cool.

Roll out Dough

Roll out the yeast dough on a floured work surface into a rectangle (approx. 30x40 cm).

Spread Dough

Spread the cooled pudding evenly on the dough, leaving a small border free.

Shape Snails

Roll up the dough from the long side and cut into slices about 3 cm thick.

Place Snails in Shape

Place the snails with some distance on a baking tray lined with baking paper or in a greased springform pan (26 cm diameter).

Let Snails Rise

Cover the snails and let rise again for about 30 minutes.

Preheat Oven

Preheat the oven to 180°C top/bottom heat.

Bake Snails

Bake the snails in the preheated oven for about 25-30 minutes until golden brown.

Prepare Glaze

Thermomix® Setting

For the glaze, add the icing sugar and lemon juice to the mixing bowl and stir for 20 sec./speed 3.

Glaze Snails

Brush the cooled snails with the glaze.
