Description

This mandarin sour cream cake with streusel topping is a delicious cake classic that can be easily prepared with the Thermomix®. The cake consists of a shortcrust pastry base, a creamy sour cream filling with mandarins, and crispy streusel. Ideal for birthdays, brunch, or simply as a sweet treat in the afternoon. The preparation time is approximately 60 minutes.

  • 300 g Wheat flour Type 405
  • 100 g Sugar
  • 1 Päckchen Vanilla sugar
  • 1 TL Baking powder
  • 150 g Cold butter
  • 1 Stück Egg (size M)
  • 2 Dosen Mandarins (approx. 175 g drained weight each)
  • 600 g Sour cream
  • 80 g Sugar
  • 1 Päckchen Vanilla pudding powder (for cooking)
  • 2 Stück Eggs (size M)
  • 1 TL Vanilla extract
  • 200 g Flour
  • 100 g Sugar
  • 1 Päckchen Vanilla sugar
  • 120 g Cold butter
  • 1 Prise Salt

Preparation (6 steps)

Prepare the shortcrust pastry base

Thermomix® Setting

Place 300 g wheat flour Type 405, 100 g sugar, 1 packet of vanilla sugar and 1 tsp baking powder in the mixing bowl and mix for 20 sec/speed 4. Add 150 g cold butter in pieces and 1 egg (size M) and knead for 2 min/knead setting to form a dough.

Roll out the dough and place in the tin

Roll out the dough on a floured work surface and place in a greased cake tin (approx. 26 cm diameter). Form a small rim.

Prepare the topping

Drain 2 cans of mandarins (approx. 175 g drained weight each). Place 600 g sour cream, 80 g sugar, 1 packet of vanilla pudding powder (for cooking), 2 eggs (size M) and 1 tsp vanilla extract or 1 packet of vanilla sugar in the mixing bowl and mix for 30 sec/speed 3.

Place topping on the dough

Spread the drained mandarins on the pastry base. Pour the sour cream topping over it.

Prepare the streusel topping

20 sec/Speed 4

Place 200 g flour, 100 g sugar, 1 packet of vanilla sugar, 120 g cold butter in pieces and 1 pinch of salt in the mixing bowl and process into streusel for 20 sec/speed 4.

Spread the streusel and bake

Spread the streusel on the cake. Bake the cake in a preheated oven at 180 °C top/bottom heat for approx. 45 minutes.
