Description

This caramelized pear cake is a delightful treat, perfect for a cozy autumn afternoon. The pears, softened in a rich caramel, create a moist and flavorful base for the spiced cake. Ingredients (13 ingredients)

  • 3 piece ripe pears
  • 220 g unsalted butter
  • 120 g golden caster sugar
  • 100 g light brown soft sugar
  • 3 piece eggs
  • 100 g soured cream
  • 220 g plain flour
  • 1.5 tsp baking powder
  • 0.25 tsp bicarbonate of soda
  • 2 tsp ground cinnamon
  • 75 g caster sugar
  • 75 g butter
  • 3 tbsp maple syrup

Preparation (8 steps)

Prepare the oven and cake tin

Preheat the oven to 180°C (160°C fan). Line the base of a 20cm springform cake tin with parchment paper, ensuring it extends about 1cm up the sides.

Make the caramel

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 75g caster sugar to the Mixtopf. Melt the sugar by heating for 5 Min./120°C/Stufe 1, until it starts to turn golden brown. Add 75g butter and 3 tbsp maple syrup, then mix for 20 Sek./Stufe 3. Pour the caramel into the prepared cake tin.

Arrange the pears

Arrange 3 ripe pears, quartered, on top of the caramel in the cake tin.

Cream butter and sugar

Thermomix® Setting
6 min/Speed 4

Add 220g unsalted butter, 120g golden caster sugar, and 100g light brown soft sugar to the Mixtopf. Cream together for 6 Min./Stufe 4 until light and fluffy.

Add eggs and soured cream

Thermomix® Setting
10 sec/Speed 3

Add 3 eggs, one at a time, to the Mixtopf, mixing for 10 Sek./Stufe 3 after each addition. Add 100g soured cream and mix for 10 Sek./Stufe 3.

Incorporate dry ingredients

Thermomix® Setting
10 sec/Speed 4

Add 220g plain flour, 1½ tsp baking powder, ¼ tsp bicarbonate of soda, and 2 tsp ground cinnamon to the Mixtopf. Mix for 10 Sek./Stufe 4 to incorporate. Use the spatula to scrape down the sides of the Mixtopf if needed.

Bake the cake

Spoon the cake mixture over the pears in the cake tin, gently smoothing the surface. Bake in the preheated oven for 1 hour, or until a skewer inserted into the middle comes out clean. If any wet crumbs cling to the skewer, bake for a further 5-10 minutes.

Cool and invert

Leave the cake to cool completely in the tin. Invert onto a serving plate and remove the parchment paper before slicing.
