Description

These tempeh patties with colorful potato salad are a protein-rich and vegetarian main course, prepared in the Thermomix®. The main ingredients are tempeh, spelt wholemeal rolls, onions and oat flakes. The recipe is ideal for a hearty and healthy meal, especially in summer. 2 servings in 45 minutes.

Ingredients (15 ingredients)

  • 30 g Spelt wholemeal rolls
  • 200 g Tempeh natural
  • 1 Stück small red onion
  • 1 Stück Garlic clove
  • 4 Stiele Parsley
  • 1 EL tender oat flakes
  • 2 TL hot mustard
  • 1 TL Salt
  • 0.5 TL Pepper from the mill
  • 300 g cooked small firm-cooking jacket potatoes (from the previous day: e.g. new potatoes)
  • 200 g Cucumber
  • 8 Stück Radishes
  • 2 EL Aceto balsamico bianco
  • 4 EL Olive oil
  • 4 Stiele Dill

Preparation (13 steps)

Soak bread roll

Cut the bread roll into thin slices and soak in cold water for 5 to 10 minutes.

Chop tempeh

Roughly chop the tempeh and add to the mixing bowl in portions. Chop for 5 sec/speed 5. Repeat if necessary.

Chop onion

Peel and quarter the onion and place in the mixing bowl. Chop for 3 sec/speed 5.

Chop garlic

Peel the garlic and place in the mixing bowl. Chop for 3 sec/speed 7.

Chop parsley

Wash the parsley, pat dry, pluck the leaves and place in the mixing bowl. Chop for 3 sec/speed 5.

Prepare tempeh mixture

Squeeze the bread roll well and place in a bowl with the tempeh, onion, garlic, parsley and oat flakes. Season with mustard, salt and pepper. Knead everything thoroughly and leave to stand for about 15 minutes.

Prepare potatoes

In the meantime, peel the potatoes and cut into slices.

Prepare cucumber and radishes

Clean the cucumber, wash, quarter lengthwise, remove the seeds and cut into pieces about 1 cm wide. Clean the radishes, wash and cut into wedges.

Prepare vinaigrette

Place vinegar, water, salt, pepper and oil in the mixing bowl. Stir for 10 sec/speed 3.

Chop dill

Wash the dill, pat dry, pluck the tips and set aside a few for garnish, add the rest to the mixing bowl. Chop for 3 sec/speed 5.

Mix potato salad

Mix the potatoes, cucumbers and radishes with the vinaigrette and let the potato salad steep a little.

Fry tempeh patties

Shape the tempeh mixture into 6 to 8 patties with moistened hands and fry in the remaining oil in a large coated pan over medium heat for about 5 minutes on each side until light brown. Remove and drain on kitchen paper.

Arrange

To serve, season the potato salad again with salt and pepper and arrange on plates with the patties. Garnish with the reserved dill tips.
