Description

This homemade tortilla from Santiago is a traditional Argentine recipe that I have adapted to make it even easier with the Thermomix®. The dough, with its touch of fat, gives it a unique flavor and a slightly crispy texture. It is perfect to accompany some mates on an autumn afternoon or as a simple and tasty appetizer. The original recipe uses lard, but you can use butter if you prefer. Go ahead and try this delicacy that will transport you directly to Argentina! It is prepared in a short time and is ideal for sharing with friends and family.

Ingredients (5 ingredients)

  • 70 gramos plain flour
  • 0.5 cup self-raising or cake flour
  • 1 container warm water
  • 1 tsp salt
  • 2.5 tbsp lard or fat

Preparation (5 steps)

Mix dry ingredients and fat

Place ½ cup (70 grams) of plain flour and ½ cup of self-raising flour in the Thermomix bowl. Add 2½ tablespoons of melted lard or fat. Mix for 10 seconds/Speed 4.

Add water and salt

Thermomix® Setting
20 sec/Speed 4

Add 1 glass of warm water and 1 teaspoon of salt to the bowl. Mix for 20 seconds/Speed 4. If the dough does not compact, you can add more flour little by little and mix for a few more seconds.

Knead the dough

Knead the dough in the Thermomix for 2 minutes/Knead function. The dough should be smooth and soft.

Refrigerate the dough

Make a ball with the dough and wrap it in cling film. Refrigerate in the refrigerator for approximately 1 hour.

Cook the tortilla

Heat a griddle or flat grill over low heat. Roll out the dough and shape it into a round. Place it directly on the hot griddle and cook for 5-10 minutes on each side, until golden brown.
