Description

I love preparing these tortillas! The sirloin steak, marinated with aromatic herbs, goes perfectly with the freshness of homemade guacamole. The slight spiciness of the chili pepper adds that extra touch that never hurts. Perfect for an informal dinner with friends or for a Sunday brunch. Preparation is quick and easy, ideal when you have little time but do not want to give up taste. A dish that everyone agrees on, especially lovers of Mexican cuisine! They can be prepared in advance and filled at the time.

Ingredients (14 ingredients)

  • 8 piece Corn tortillas to cook
  • 500 g Beef sirloin steak
  • 2 tbsp Extra virgin olive oil
  • 4 foglia Sage
  • 2 rametto Rosemary
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 2 piece Avocado
  • 50 g Onions
  • 0.5 piece Hot red chili pepper
  • 50 g Cherry tomatoes
  • 1 pinch Salt
  • 1 tbsp Extra virgin olive oil
  • 1 piece Lime (juice)

Preparation (6 steps)

Marinating the sirloin steak

Brush the sirloin steak with extra virgin olive oil on both sides, season with salt and pepper and massage well. Put the meat in a food bag, add sage and rosemary and let it marinate for at least 10 minutes.

Chop onion, chili pepper and tomatoes

Put 50g of onion, 1/2 hot red chili pepper and 50g of cherry tomatoes in the bowl. Chop finely: 5 Sec./Speed 5.

Guacamole preparation

Divide the avocado in half and remove the pit. With a knife, make oblique incisions in the avocado pulp and, with a spoon, extract it and transfer it to a bowl. Crush the pulp with a fork. Add the onion, chili pepper and chopped tomatoes from the bowl to the avocado pulp. Mix well, then season with salt, 1 tablespoon of lime juice and 1 tablespoon of extra virgin olive oil. Mix again until a homogeneous sauce is obtained.

Cooking the sirloin steak

Heat a pan and cook the marinated steaks for about 4 minutes per side. Once cooked, let the meat rest for 2-3 minutes. Cut the meat into thin slices, to make it easier to handle in the tortillas.

Heat the tortillas

Heat a non-stick pan and heat the tortillas on both sides.

Fill and serve

Fill each tortilla with plenty of slices of sirloin steak and a generous amount of guacamole. Roll the tortillas tightly. Cut the tortillas in half with a diagonal cut and serve still hot.
