Description

These millet vegetable fritters with herb dip are a delicious and healthy main course. The fritters are rich in fiber and the vegetables provide an extra serving of vitamins. The herb dip rounds off the dish perfectly. Preparation time approx. 60 minutes, sufficient for 2 servings. Ideal for a light and balanced meal.

Ingredients (16 ingredients)

  • 300 g Millet
  • 600 ml Water
  • 3 Stück Carrot
  • 3 Stück Zucchini
  • 6 EL Soy Skyr
  • 3 EL Olive oil
  • 3 EL Linseed (ground)
  • 6 EL Chickpea flour
  • 3 TL Ground cumin
  • 3 Prise Salt
  • 3 Prise Pepper
  • 3 EL Oil for frying
  • 300 g Vegetable yogurt alternative or yogurt
  • 3 EL Chopped fresh herbs (e.g. parsley, dill, chives)
  • 3 TL Lemon juice
  • 3 Prise Salt

Preparation (6 steps)

Prepare millet

Rinse 100 g of millet in a sieve with hot water to remove the bitter substances. Put the millet in a small saucepan and bring to a boil with 200 ml of water. Reduce the heat and simmer the millet for another 10-12 minutes until the water has been completely absorbed. Then remove from the heat and let it cool.

Prepare vegetables

While the millet is cooling, clean, peel or wash 1 carrot and 1 zucchini and finely grate on a vegetable grater. If the zucchini contains a lot of liquid, squeeze it out lightly with your hands.

Prepare fritter mixture

Put the cooked millet, the grated 1 carrot and 1 zucchini, 2 tbsp soy skyr and 1 tbsp olive oil in the mixing bowl. Add 1 tbsp linseed (ground), 2 tbsp chickpea flour, 1 tsp ground cumin, salt and pepper and stir for 20 sec/speed 3 until a moldable mass is formed. If it is too moist, add some more chickpea flour.

Shape and fry fritters

Use your hands to form eight small fritters from the mixture and flatten them slightly. Heat 1 tbsp oil for frying in a pan and fry the fritters in it over medium heat for 3-4 minutes on each side until golden brown.

Prepare herb dip

Meanwhile, for the herb dip, put 100 g vegetable yogurt alternative, 1 tbsp chopped fresh herbs (e.g. parsley, dill, chives), 1 tsp lemon juice and 1 pinch of salt in the mixing bowl and stir for 10 sec/speed 3.

Serve

Remove the millet vegetable fritters from the pan and drain briefly on kitchen paper. Then serve with the herb dip.
