Description

This Thermomix® recipe for cinnamon swirls from the rolling pin is a sweet pastry with milk, sugar, yeast, butter, and wheat flour.   • 175 g Sugar
  • 1 Pck. Dry yeast
  • 200 g Butter
  • 500 g Wheat flour Type 405
  • 1 Prise(n) Salt
  • 2 Eggs (size M)
  • 1 TL Cinnamon
  • Flour for the work surface
  • Butter for greasing

Preparation (9 steps)

Activate yeast

2 min/99°F/Speed 1, 10 sec/Speed 2 37

Add 250 ml milk and 1 tbsp sugar to the mixing bowl and heat for 2 min./37°C/speed 1. Add 1 packet of dry yeast and stir for 10 sec./speed 2. Close the mixing bowl and let the yeast rest in the mixing bowl for about 10 minutes until bubbles form.

Melt butter

3 min/122°F/Speed 1 50

Add 100 g butter to the mixing bowl and melt for 3 min./50°C/speed 1. Then transfer to another bowl and let cool slightly.

Prepare dough

Thermomix® Setting
10 sec/Speed 3, 2 min/Kneading speed, 30 sec/Kneading speed

Add 500 g wheat flour type 405, 60 g sugar and 1 pinch of salt to the mixing bowl and mix for 10 sec./speed 3. Add the melted butter, 2 eggs and the yeast milk and knead for 2 min./kneading stage to form a smooth, elastic dough. If necessary, add a little more flour and knead for another 30 sec./kneading stage.

Let the dough rise

Remove the dough from the mixing bowl, place in a bowl, cover and let rise in a warm place for about 1 hour until the volume has approximately doubled.

Mix cinnamon sugar

Add 105 g sugar and 1 tsp cinnamon to the mixing bowl and mix for 5 sec./speed 5. Transfer to another bowl and set aside.

Melt butter (for topping)

Add 100 g butter to the mixing bowl and melt for 3 min./50°C/speed 1. Transfer to another bowl and set aside.

Shape and top the dough

Roll out the dough on a lightly floured work surface to about 0.5 cm thick. Then cut into 1 cm wide and 20-30 cm long strips. Wrap the rolling pin with aluminum foil and grease well with butter. Prepare a baking dish that is large enough to place the handles of the rolling pin on the edges and so that the roller does not touch the bottom of the dish. Wrap the dough strips spirally and slightly overlapping around the rolling pin. Brush the rolled-up dough strips with the melted butter and sprinkle generously with cinnamon sugar all around.

Baking

Preheat the oven to 180 °C (top/bottom heat). Place the rolling pin on the baking dish so that the dough hangs in the air. Bake the striezel in the hot oven for 20-25 minutes, turning it once in between so that it browns evenly.

Cool and serve

Remove from the oven, let cool briefly, then carefully remove from the roller. Proceed in the same way with the remaining dough.
