Description

These speck dumplings are a classic of Trentino cuisine, perfect for warming up autumn days! I often prepare them when I have guests for dinner and want to offer a typical and tasty dish. The scent of smoked speck goes perfectly with the softness of stale bread, creating an explosion of flavors. The preparation is quick and easy thanks to the Thermomix®, which helps me chop the ingredients and knead everything in a few minutes. Served in meat broth, they are a real comfort food!

  • Bread
  • to taste Flour
  • Onions
  • to taste Butter
  • Parsley
  • Eggs
  • Milk
  • to taste Salt
  • Meat broth

Preparation (8 steps)

Chop the onion

Thermomix® Setting

Put the onion in the bowl and chop for 3 Sec./Stufe 5. Transfer to a bowl.

Melt the butter

Thermomix® Setting
2 min/122°F/Speed 2 50

Put the butter in the bowl and melt for 2 Min./50°C/Stufe 2.

Sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the chopped onion to the melted butter in the bowl and sauté for 3 Min./120°C/Stufe 1.

Prepare the dough

Pour the sautéed onion into a large bowl. Add the bread cut into cubes, the chopped parsley, the salt, the flour, the eggs and the milk. Cut the speck into cubes and add it to the bowl.

Knead

Work the dough with your hands until you get a homogeneous mixture. Let it rest for 10 minutes.

Form the dumplings

With wet hands, shape the dumplings into a ball shape with a diameter of about 6 cm.

Cook the dumplings

Bring a pot of salted water to a boil. Cook the dumplings for 8-10 minutes.

Serve

When the dumplings are ready, remove them from the cooking water. Serve the dumplings in meat broth and garnish with fresh parsley.
