Description

This creamy scrambled egg with North Sea crabs and the special aroma of Kampot pepper is an absolute highlight for any brunch or festive breakfast! I especially like to make it when I have guests, because it is easy to prepare and simply tastes delicious. The Kampot pepper gives the dish a fine spiciness and the North Sea crabs provide a maritime note. The preparation in the Thermomix® makes the scrambled eggs particularly creamy and airy. A real treat that is guaranteed to please everyone!

Ingredients (8 ingredients)

  • 12 piece Eggs (Gr. M)
  • 1 tsp Curry
  • Salt
  • 200 g Whipping cream
  • 2 tsp fermented Kampot pepper
  • 2 tbsp Butter
  • 3 Stiele Coriander
  • 200 g North Sea crabs

Preparation (5 steps)

Prepare eggs

Thermomix® Setting
20 sec/Speed 4

Add 12 eggs (Gr. M), 1 tsp curry, salt and 200 g whipping cream to the mixing bowl and mix for 20 sec./speed 4.

Crush pepper

Finely crush 2 tsp of fermented Kampot pepper in a mortar and set aside.

Prepare scrambled eggs (1st portion)

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 1 tbsp butter in the mixing bowl and melt for 3 min./120°C/speed 1. Add half of the egg mixture and cook for 8 min./90°C/Gentle stir setting/Reverse.

Prepare scrambled eggs (2nd portion)

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 1 tbsp butter in the mixing bowl and melt for 3 min./120°C/speed 1. Add the remaining egg mixture and cook for 8 min./90°C/Gentle stir setting/Reverse.

Refine and arrange scrambled eggs

Wash the coriander, pluck the leaves and chop coarsely. Sprinkle the scrambled eggs with the crushed Kampot pepper and garnish with coriander. Arrange with North Sea crab meat and serve.
