Description

This ragout of fillet tips with truffle butter is a true culinary delight! I especially like to make it for festive occasions, as the truffle note makes it something very special. The tender fillet tips, combined with mushrooms and broccoli, make for a harmonious dish. The preparation is a bit more complex, but the result is well worth it. Served with ribbon noodles, it is a perfect main course for the cold season. A dash of Cognac rounds off the aroma wonderfully. If you like, you can add some freshly grated Parmesan cheese.

Ingredients (14 ingredients)

  • 750 g Broccoli
  • 250 g Shallots
  • 600 g brown Mushrooms
  • 800 g Fillet tips from pork and beef
  • 3 tbsp Oil
  • to taste Salt
  • to taste Pepper
  • 50 g Truffle butter
  • 2 piece Flour
  • 1 tsp Broth
  • 300 g Ribbon noodles
  • 150 g Crème fraîche
  • 4 Stiele Parsley
  • 4 tbsp Cognac

Preparation (9 steps)

Prepare broccoli, shallots and mushrooms

Clean, wash and divide the broccoli into florets. Peel and halve or quarter the shallots, depending on their size. Clean the mushrooms, wash if necessary, and halve them. Pat the meat dry and cut into pieces. These steps are prepared outside of the Thermomix.

Sauté shallots and mushrooms

Thermomix® Setting

Add 1 tbsp oil to the mixing bowl. Add shallots and mushrooms, season with salt and pepper and sauté for 5 min./120°C/speed 1.

Sweat flour

Thermomix® Setting
1 min/248°F/Speed 1 120

Sprinkle flour over the top and sauté for 1 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 600 ml water and broth to the mixing bowl and cook for 5 min./100°C/speed 2.

Cook ribbon noodles and broccoli

Cook ribbon noodles and broccoli in separate pots with boiling salted water. The ribbon noodles for approx. 10 minutes, the broccoli for approx. 5 minutes. These steps are prepared outside of the Thermomix.

Refine sauce

Thermomix® Setting
1 min/194°F/Speed 2 90

Add crème fraîche to the mixing bowl and stir in for 1 min./90°C/speed 2.

Finish ragout

Thermomix® Setting
3 min/194°F/Linkslauf Speed 1 90 Reverse

Add remaining truffle butter and meat to the mixing bowl and let it steep for 3 min./90°C/reverse rotation speed 1.

Chop parsley and season sauce

Thermomix® Setting
3 sec/Speed 5

Wash the parsley, shake dry and add to the mixing bowl. Chop for 3 sec./speed 5. Season the sauce with salt, pepper and Cognac.

Arrangement

Drain the noodles and broccoli. Arrange with ragout and sprinkle with parsley. The arrangement takes place outside of the Thermomix.
