Description

This pork tenderloin in leek sauce is a comforting and tasty dish, perfect for a special meal or a family dinner. The combination of the tender pork with the creamy leek sauce is simply delicious. I often prepare it in autumn, when the leeks are at their best. The recipe is relatively simple, although it requires a bit of time to prepare all the ingredients. If you want to give it an extra touch, you can add a bit of white wine to the sauce. It is a dish that always triumphs at home! Also, it is ideal to serve with roasted potatoes or a homemade mashed potatoes. Enjoy!

Ingredients (9 ingredients)

  • 3 piece Leeks
  • 1 kilogramo Pork tenderloin
  • 4 piece Potatoes
  • 3 tbsp Milk cream
  • 3 tsp Concentrated broth powder
  • 1 tbsp Cornstarch
  • 1 pinch Salt
  • 1 pinch Pepper
  • 0.5 cup Water

Preparation (9 steps)

Preparation of the potatoes

Wash, peel and cut the potatoes into medium-thick slices. Place the potato slices in a pot with water and boil until they are slightly tender. Set aside.

Sealing the tenderloin

Cut the tenderloin into four portions. In a pan with a few drops of oil, sear the tenderloin on all sides until golden brown. Remove from the pan and set aside.

Preparation of the leeks

Wash and cut the leeks into julienne strips. Place the leeks in the Thermomix glass.

Sautéing the leeks

Add a little oil to the glass. Sauté the leeks for 5 Min./120°C/Stufe 1.

Preparation of the leek sauce

Add the concentrated broth powder, water, salt and pepper to the glass. Mix for 30 Seg./Stufe 3.

Cooking the sauce

Add the milk cream to the glass. Cook for 8 Min./90°C/Stufe 2.

Thicken the sauce (optional)

Thermomix® Setting
1 min/194°F/Speed 2 90

If you want a thicker sauce, dissolve the cornstarch in a little water and add to the glass. Mix for 1 Min./90°C/Stufe 2.

Assembly of the dish

Sear the potato slices in a pan. Place the potato slices in a baking dish, making a layer. On this layer, place the meat and coat with the leek sauce on top.

Gratin in the oven

Bake at 200°C until golden brown. The baking time depends on the oven, but it is usually between 10 and 15 minutes.
