Description

This apple schmarren is a wonderful variation of the classic Kaiserschmarren. I especially like to make it in the autumn when the apples are fresh from the tree. The rum raisins give the whole thing a special touch, but you can also leave them out if children are eating. The schmarren is quick to prepare and tastes simply delicious warm. A perfect dish for a cozy weekend or as a sweet main course. If you like, you can add some cinnamon to the batter. An absolute favorite recipe!

Ingredients (9 ingredients)

  • 4 piece Eggs (Size M)
  • 125 ml Milk
  • 120 g Flour
  • 60 g Sugar
  • 1 tbsp Sour cream
  • 60 g Rum raisins
  • 2 piece Small apples
  • 3 tbsp Soft butter
  • 1 tbsp Powdered sugar

Preparation (7 steps)

Whisk egg whites

Thermomix® Setting

Insert the butterfly into the mixing bowl. Separate 4 eggs. Add the egg white to the mixing bowl and whisk for 3 min./speed 3.5 until stiff. Transfer the egg whites and set aside.

Prepare dough

Remove the butterfly. Add egg yolks, 125 ml milk, 120 g flour, 50 g sugar and 1 tbsp sour cream to the mixing bowl and mix for 20 sec./speed 4.

Fold in raisins and egg whites

Add 60 g rum raisins to the mixing bowl and stir in with the spatula. Carefully fold in the egg whites.

Prepare apples

Wash, core and slice 2 small apples.

Caramelize apple slices

Sprinkle 1 tbsp sugar into an ovenproof pan. Distribute apple slices and 2 tbsp soft butter on top. Heat the pan on the stove until the butter has melted and the apples are lightly caramelized.

Bake Schmarren

Pour the batter over the apple slices in the pan and bake in a preheated oven at 200°C (top/bottom heat) for 10–15 minutes until golden brown.

Refine Schmarren

Spread 1 tbsp soft butter on the edge of the pan and let it run under the schmarren. Remove the pan, carefully invert. Dust schmarren with 1 tbsp powdered sugar and serve.
