Description

This apple tiramisu variation with apples, brown sugar, mascarpone and yogurt is a quick layered dessert from the Thermomix®. Preparation takes about 50 minutes and yields 4 servings. Ideal as a festive dessert, especially in winter and at Christmas time. The recipe is a lighter alternative to classic tiramisu.

Ingredients (13 ingredients)

  • 2 Stück Apples
  • 25 g brown sugar
  • 100 ml White wine
  • 1 TL Lemon juice
  • 1 TL Cinnamon
  • 25 g chopped Almonds
  • 125 g Mascarpone
  • 75 g Yogurt
  • 1 Pck. Vanilla sugar
  • 1 EL Sugar
  • 100 g Ladyfingers
  • 4 EL Amaretto
  • Cocoa powder

Preparation (8 steps)

Prepare apples

Peel 2 apples, remove the core and cut the pulp into small cubes. Set the apple cubes aside.

Prepare caramel

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 25 g of brown sugar into the mixing bowl and caramelize for 3 min./120°C/speed 1. Use the spatula to push the sugar away from the edge if necessary.

Simmer apple mixture

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Add 100 ml white wine and 1 tsp lemon juice to the mixing bowl and bring to the boil for 2 min./100°C/speed 1. Add 0.5 tsp cinnamon and add the prepared apple cubes. Simmer for 5 min./90°C/reverse rotation speed 1.

Add almonds

Roast 25 g chopped almonds in a pan without fat. Stir the roasted almonds into the apple mixture and let the mixture cool.

Prepare mascarpone cream

Thermomix® Setting
30 sec/Speed 3

Put 125 g mascarpone, 75 g yogurt, 1 packet vanilla sugar and 1 tbsp sugar into the mixing bowl. Stir with the butterfly for 30 sec/speed 3.

Prepare ladyfingers

Chop 100 g ladyfingers and spread evenly over 4 dessert glasses.

Layer tiramisu

Drizzle 1 tbsp Amaretto over the ladyfingers. Place the cooled apple mixture on top of the ladyfingers. Fill with the mascarpone cream and smooth it out.

Decorate and refrigerate

Mix cocoa powder with the remaining 0.5 tsp cinnamon. If desired, cut out a star from baking paper the size of the glass, place it on the cream and dust with cocoa. Remove the paper and refrigerate the tiramisu until ready to eat.
