Description

This recipe for stewed veal is a hearty main course, ideal for festive occasions. The veal is first seared in a pan and then stewed with onions, garlic, tomato paste, Vermouth and bouillon in the Thermomix®. Finally, cream is added and served with fresh herbs. The preparation time is about 110 minutes.

Ingredients (13 ingredients)

  • 1200 g Veal (e.g. knuckle or shoulder fillet)
  • 3 tbsp Frying butter
  • 6 piece Sage leaves
  • 1.5 piece Onion
  • 2 piece Garlic
  • 2 tsp Tomato paste
  • 30 g White Vermouth
  • 600 g Bouillon
  • 1 tsp Salt
  • 1 pinch Pepper
  • 400 g Cream
  • 4 piece Sage leaves (chopped)
  • 1 packet Parsley

Preparation (8 steps)

Prepare veal

Cut veal (e.g. knuckle or shoulder fillet) into 3cm cubes.

Sear meat

Heat frying butter in a roasting pan. Fry sage leaves in it, remove, then sear the veal in batches until well browned and remove from the pot.

Chop onion and garlic

Peel onion and garlic and put in the mixing bowl. Chop 3 sec./level 5.

Sauté onion and garlic

Push onion and garlic down with the spatula. Sauté 3 min./120°C/level 1.

Sauté tomato paste

Carefully sauté the tomato paste.

Simmer

Pour in Vermouth and bouillon. Season with salt and pepper and simmer covered over low heat for 1 1/2 hours.

Add cream and reduce

Then add cream and let it reduce a little.

Serve

Sprinkle the chopped sage leaves and parsley over it before serving.
