Description

This vegan vanilla layer cake is a delightful treat, perfect for birthdays, brunches, or any special occasion. The dairy-free spread and milk create a moist and tender crumb, while the vanilla bean adds a touch of elegance. I've been making this cake for years, and it's always a crowd-pleaser. The dairy-free buttercream is light and fluffy, complementing the jam filling beautifully. It's surprisingly easy to make with the Thermomix®, and the results are simply delicious. This cake is a wonderful way to enjoy a classic dessert without any animal products.

Ingredients (10 ingredients)

  • 150 g dairy-free spread
  • 300 ml dairy-free milk
  • 1 tbsp cider vinegar
  • 1 piece vanilla pod
  • 300 g self-raising flour
  • 200 g golden caster sugar
  • 1 tsp bicarbonate of soda
  • 100 g dairy-free spread
  • 200 g icing sugar
  • 4 tbsp jam

Preparation (9 steps)

Prepare the oven and baking tins

Preheat the oven to 180°C (160°C fan). Line the bases of 2 x 20cm sandwich tins with baking parchment and grease with a little dairy-free spread. No Thermomix settings needed for this step.

Prepare the dairy-free milk mixture

Put the dairy-free milk into a jug and add the cider vinegar. Leave for a few minutes until it looks a little lumpy. No Thermomix settings needed for this step.

Combine cake ingredients

Put half of the vanilla seeds, dairy-free spread, self-raising flour, golden caster sugar, and bicarbonate of soda into the Thermomix bowl. Pour over the milk mixture.

Mix the cake batter

Thermomix® Setting
30 sec/Speed 4

Mix all ingredients in the Thermomix bowl for 30 Sec./Stufe 4 until smooth, using the spatula to scrape down the sides if necessary.

Bake the cakes

Divide the mix between your two prepared tins, then bake in the centre of the oven for 30-35 mins or until a skewer inserted into the middle of the cakes comes out clean. No Thermomix settings needed for this step.

Cool the cakes

Leave the cakes in their tins until cool enough to handle, then carefully turn out onto wire racks to cool completely. No Thermomix settings needed for this step.

Prepare the vegan buttercream

Thermomix® Setting
20 sec/Speed 3

To make the vegan buttercream, add the dairy-free spread, icing sugar and remaining vanilla seeds to the Thermomix bowl. Mix for 20 Sec./Stufe 3, increasing to Stufe 4 if needed, until pale and fluffy. If the mixture is too firm, add 1-2 tbsp dairy-free milk and mix again for 10 Sec./Stufe 3.

Assemble the cake

Spread the jam onto one of the cooled sponges. Then, spread the vegan buttercream evenly over the jam. Place the other sponge on top. No Thermomix settings needed for this step.

Dust and serve

Dust the assembled cake with a little icing sugar or caster sugar before slicing. No Thermomix settings needed for this step.
