Description

This dish of poultry simmered in red wine is a classic revisited with the Thermomix®. The meat, tender and flavorful, is enhanced by a rich and fragrant sauce, garnished with fresh vegetables and porcini mushrooms. I often prepare this dish in the fall, when porcini mushrooms are at their peak. It is perfect for a festive meal or a friendly dinner with friends. The red wine marinade brings an incomparable depth of flavor. A comforting and easy to make dish with the Thermomix®!

Ingredients (15 ingredients)

  • 1 piece Poultry
  • 1 kg Porcini mushrooms
  • 400 g New carrots
  • 2 branches Celery
  • 250 g Smoked bacon
  • 1 dl Full-bodied red wine
  • 1 c. à soupe Flour
  • 2 c. à soupe Poultry stock
  • 4 piece Shallots
  • 3 clove Garlic
  • 2 bunch Thyme
  • 80 g Butter
  • 3 c. à soupe Oil
  • Salt
  • Pepper

Preparation (12 steps)

Preparation of the marinade

The day before, pour the red wine into a dish, salt and pepper. Add the pieces of poultry. Marinate in the refrigerator for 12 hours. (This step is done outside the Thermomix).

Ingredient preparation

The next day, peel and chop the shallots. Cut the smoked bacon into lardons. Dilute the poultry stock in 30 cl of boiling water. (This step is done outside the Thermomix).

Chop the shallots

Put the shallots in the bowl and chop 3 Sek./Stufe 5.

Sear the poultry and bacon

Heat the oil in a saucepan (outside Thermomix). Sear the drained poultry pieces (reserve the marinade), the bacon and the shallots. Stir and cook for 5 min. (This step is done outside the Thermomix).

Add the flour and marinade

Add the flour to the saucepan and let it brown. Pour in the marinade. Let reduce 15 min. (This step is done outside the Thermomix).

Simmer the poultry

Pour the poultry stock into the saucepan and simmer for 1 hour. (This step is done outside the Thermomix).

Vegetable preparation

Meanwhile, wash the mushrooms under a stream of cold water. Cut them in 2. Wash and chop the thyme. Wash and cut the celery into chunks. Peel the carrots. (This step is done outside the Thermomix).

Put the thyme in the bowl and chop 3 Sek./Stufe 7.

Add the vegetables and garlic

Incorporate the vegetables (carrots and celery) into the chicken in the saucepan. Chop the garlic. (This step is done outside the Thermomix).

Put the garlic in the bowl and chop 3 Sek./Stufe 7.

Sear the porcini mushrooms

20 min before the end of cooking the meat, melt the butter in a frying pan over high heat and sear the porcini mushrooms with the garlic, stirring often. After 10 min, add them to the fricassee. Salt, pepper. Let cook another 10 min. (This step is done outside the Thermomix).

Serve

Serve hot. (This step is done outside the Thermomix).
