  • 250 g Bread rolls or white bread (stale, diced)
  • 1 Stück Onion
  • 80 g Butter
  • 20 g Fresh parsley
  • 300 ml Milk (whole milk)
  • 2 Stück Eggs (size M)
  • 1 Prise Nutmeg
  • nach Geschmack Salt
  • nach Geschmack Pepper

Chop the onion

Thermomix® Setting

Peel and quarter 1 onion and place in the mixing bowl. Chop for 3 sec/speed 5. If necessary, scrape down the sides with the spatula.

Sauté the onion

3 min/248°F/Speed 1 120

Add 80 g butter to the onions in the mixing bowl and sauté for 3 min/120°C/speed 1.

Chop the parsley

Thermomix® Setting
3 sec/Speed 8

Wash and shake dry 20 g fresh parsley, pluck the leaves from the stems and place in the mixing bowl. Chop for 3 sec/speed 8. If necessary, scrape down the sides with the spatula.

Prepare the bread mixture

Place 250 g stale, diced bread rolls or white bread in a large bowl. Add the sautéed onions and chopped parsley from the mixing bowl to the bread cubes.

Prepare the milk mixture

Thermomix® Setting
20 sec/Speed 4

Place 300 ml whole milk, 2 eggs (size M), 1 pinch of nutmeg, salt and pepper in the mixing bowl and mix for 20 sec/speed 4. The temperature is not needed.

Mix the dumpling mixture

Pour the milk mixture from the mixing bowl over the bread cubes and mix everything thoroughly. Let the dumpling mixture rest for about 30 minutes so that the liquid can absorb well.

Shape the dumpling roll

Form the mixture into an oblong roll, press it together well and wrap it tightly in a dish towel. Tie the ends with kitchen twine.

Cook the dumpling

30-40 min/212°F/Speed 1 100 Reverse

Add plenty of water and salt to the mixing bowl and bring to a boil. Place the dumpling roll in the mixing bowl and let it simmer for 30-40 min/100°C/speed 1 on reverse. The reverse prevents the dumpling roll from being chopped up.

Serve

Carefully remove the dumpling roll from the mixing bowl, unwrap it and serve it sliced. It goes well with roast meat, goulash or mushroom ragout.
