Description

This dish is a feast for the senses! Tender salmon fillet, nestled on creamy mashed potatoes, meets crispy vegetable chips. The sweetness of the maple syrup harmonizes wonderfully with the spicy mustard dressing. I like to make this recipe when I want to cook something special without spending hours in the kitchen. Preparing the vegetable chips requires some attention, but the result is worth it. Perfect for a fine dinner or a special occasion. A touch of luxury that is easy to prepare!

Ingredients (18 ingredients)

  • 500 g floury potatoes
  • 50 ml Sea salt
  • 70 g Butter
  • to taste Pepper
  • to taste Nutmeg grated
  • 1 piece large sweet potato
  • 1 piece large beetroot (uncooked)
  • 1 piece large potato
  • 750 ml Vegetable oil
  • 320 g fresh salmon fillet
  • 20 ml Maple syrup
  • 1 tsp Mustard
  • 1 tbsp Olive oil
  • 1 tbsp Apple vinegar
  • 0.5 tsp Honey
  • 2 Handvoll Baby chard or Baby spinach
  • 2 tbsp Sesame
  • 1 piece Pomegranate

Preparation (16 steps)

Prepare potatoes

Peel and quarter 500 g of floury potatoes.

Cook potatoes

Thermomix® Setting
15 min/212°F/Speed 1 100

Put the prepared potatoes with sea salt into the mixing bowl and cover with water. Cook for 15 min./100°C/level 1 until soft.

Prepare mashed potatoes

Thermomix® Setting
20 sec/Speed 4

Drain the water. Add 70 g butter, pepper and grated nutmeg to the potatoes in the mixing bowl. Mash for 20 sec./level 4.

Season mashed potatoes

Season the mashed potatoes with sea salt, pepper and nutmeg and transfer to a bowl.

Prepare vegetables for chips

Peel a large sweet potato, a large beetroot (uncooked) and a large potato and slice thinly with a vegetable slicer.

Heat vegetable oil

Heat 750 ml of vegetable oil in a medium-sized pot. The perfect temperature is between 150-180 degrees. It is best to put a chip in it first. As soon as it starts to "sizzle", reduce the temperature.

Fry vegetable chips

Add the vegetable chips in portions (about ⅓ of the amount) to the hot oil and fry until golden brown and no longer sizzling. Important: Always stay at the pot while frying.

Drain vegetable chips

Remove the finished chips from the oil with a ladle and drain on kitchen paper.

Preheat oven

Preheat the oven to 100 degrees.

Fry salmon

Fry 320 g fresh salmon fillet with salt in a pan for one minute on each side.

Glaze salmon

After the first frying, turn the salmon over and add 20 ml of maple syrup and 50 g of butter to the pan. Place the salmon on a plate and put it in the oven.

Prepare maple syrup butter marinade

Add butter and maple syrup to the pan again and bring the mixture to a boil briefly. Mix everything together and then store in a bowl.

Glaze and bake salmon

Brush or spoon the salmon with the maple syrup butter marinade every 3-5 minutes in the oven. The salmon needs about 15 minutes in the oven at 100 degrees.

Prepare dressing

Mix 20 ml maple syrup, 1 tsp mustard, 1 tbsp olive oil, 1 tbsp apple vinegar and 0.5 tsp honey well in a bowl with a fork. Season with sea salt and pepper.

Prepare salad

Wash and spin dry 2 handfuls of baby chard or baby spinach.

To serve

Place the mash in the middle of the plate with a spoon. Place the salmon on the mash, tear it open a little with a fork. Add a teaspoon of the maple syrup butter marinade and the sesame seeds. Place the salad on the fish and pour the dressing over it or mix the salad with the dressing beforehand. Garnish with pomegranate seeds, vegetable chips and watercress.
