Put 150 g of room temperature margarine, 125 g of sugar and 1 packet of vanilla sugar into the mixing bowl and mix for 20 sec/speed 4. Add 1 egg (size L) and stir in for another 10 sec/speed 4.

Prepare the dough

Put 300 g flour, 1 pinch of iodized salt and 1 tsp gingerbread spice (to taste) into the mixing bowl and mix for 30 sec/speed 4. Then remove the dough from the mixing bowl with floured hands and form into a ball.

Preheat oven and prepare baking sheet

Preheat the oven to 180 °C (convection: 160 °C). Line a baking sheet with baking paper.

Shape cookies

Roll out portions of the dough thinly (4-5 mm) on a floured work surface, making sure that the rolling pin is always lightly floured. Cut out circles with a glass or cookie cutter (Ø approx. 7-9 cm). On the cut-out dough circles, use the same glass or cookie cutter to press the wings as a marking on the right and left in a semicircle. Press in the little feet with a fork. Form small balls of dough and place 2 on top as eyes. Press chocolate chips into them as pupils. Place an almond on top as a beak and press down lightly.
