Description

A savory snack or side dish of parmesan croquettes, perfect with BBQ dip.

Ingredients (10 ingredients)

  • 600 g Potatoes (floury)
  • Salt
  • 60 g Parmesan (half finely and coarsely grated)
  • Parmesan for sprinkling
  • 30 g Breadcrumbs
  • 2 EL Vegetable oil
  • 0.25 TL Paprika powder (sweet)
  • Herb or chili salt
  • Lemon thyme
  • Barbecue sauce for serving (ready-made product or the tomato salsa from the ham croquettes on page 22)

Preparation (9 steps)

Cook potatoes

Cook 600 g potatoes (floury) in 25-30 minutes in salted water in the simmering basket until soft. Remove simmering basket and drain potatoes, let evaporate, peel and press through a press into a bowl. Let cool.

Chop parmesan

Thermomix® Setting

Place 60 g Parmesan (half finely and coarsely grated) in the mixing bowl and chop for 5 sec./speed 8. Transfer.

Prepare breadcrumb mix

Mix 30 g breadcrumbs, finely grated Parmesan and 1/4 tsp paprika powder (sweet) in a bowl.

Prepare potato mixture

Mix the finely grated Parmesan with the breadcrumbs. Mix coarser cheese shavings with the potatoes.

Preheat oven

Preheat oven to 200 degrees convection.

Shape and bread croquettes

Take 1 tbsp of potato mixture at a time, form into croquettes. Roll in the breadcrumb mix, place on a baking sheet with baking paper.

Brush croquettes

Mix 2 tbsp vegetable oil and paprika, brush the croquettes with it.

Bake croquettes

Bake in the oven for approx. 15 minutes.

Serve croquettes

Sprinkle croquettes with herb or chili salt and Parmesan, garnish with lemon thyme and serve with barbecue sauce for dipping.
