Description

This Smoked Mackerel Rice Bowl is a quick and easy meal perfect for a weeknight dinner. I love how the smoky flavor of the mackerel pairs with the fragrant curry paste and fluffy rice. It's a complete meal with protein, carbs, and veggies all in one bowl! Feel free to add other vegetables you have on hand, like bell peppers or spinach. This recipe is also great for meal prepping – just store the rice and toppings separately and assemble when ready to eat. A delicious and satisfying dish that's ready in just 20 minutes!

Ingredients (7 ingredients)

  • 300 g long grain rice
  • 600 ml hot vegetable or fish stock
  • 1 tbsp korma curry paste
  • 100 ml frozen peas
  • 150 g pack smoked mackerel
  • 2 piece hard-boiled eggs
  • 1 handful coriander

Preparation (5 steps)

Prepare the rice and stock

Place the long grain rice into the Thermomix. Add the hot vegetable or fish stock and korma curry paste to the rice in the mixing bowl. Stir well with a spatula to combine.

Cook the rice

Thermomix® Setting

Cook the rice in the Thermomix for 6 Min./100°C/Stufe 1.

Add mackerel and peas

Break the smoked mackerel into large chunks and add to the rice in the Thermomix. Add the frozen peas.

Continue cooking

Thermomix® Setting
6 min/212°F/Speed 1 100

Continue cooking for 6 Min./100°C/Stufe 1, or until the rice is tender.

Serve

Transfer the rice mixture to a serving bowl. Top with the hard-boiled eggs and sprinkle with the coriander before serving.
