Description

Prepare a delicious Zacusca with the Thermomix®, a Romanian spread with grilled eggplants, peppers, onions and tomato paste. This vegan and vegetarian recipe is ideal as an appetizer or dip. The preparation time is approx. 120 minutes, of which 30 minutes are active working time. Perfect for lovers of light, summery vegetable cuisine.

Ingredients (9 ingredients)

400 g Onions
500 g Grilled eggplants
500 g Grilled peppers
1 EL Tomato paste
2 Stück Bay leaves
200 ml Oil
Juice of eggplants and peppers
Salt
Pepper

Preparation (3 steps)

Chop onions

Thermomix® Setting

3 sec/Speed 5

Put 400 g onions in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Sauté onions

3 min/248°F/Speed 1 248°F

Add 200 ml oil to the onions and sauté for 3 min./120°C/level 1.

Add remaining ingredients and cook

Add 500 g grilled eggplants, 500 g grilled peppers, 1 tbsp tomato paste, 2-3 bay leaves, juice of eggplants and peppers, salt and pepper to the mixing bowl. Cook for 2 hours/100°C/level 1. Leave the measuring cup on.
