Description

This Winter Pasta with roasted cauliflower is a hearty and vegetarian main course. The roasted cauliflower gives the pasta a special touch. With a preparation time of 50 minutes, this dish is ideal for a quick dinner.

Ingredients (9 ingredients)

  • 175 g Farfalle
  • 250 g Cauliflower
  • 62.5 g Walnuts
  • 7.5 g Parsley
  • 0.5 Stk. Lemon
  • 50 g Parmesan cheese
  • 1 Stk. Garlic cloves
  • 35 ml Olive oil
  • 4 g Chili flakes

Preparation (6 steps)

Preheat oven and prepare ingredients

Preheat the oven to 180 °C. Divide cauliflower into bite-sized pieces, roughly chop parsley, and finely grate lemon zest and Parmesan.

Roast cauliflower

Place cauliflower on a baking sheet lined with baking paper, add unpeeled garlic cloves, drizzle with 35 ml olive oil, and season with 4 g chili flakes, salt and pepper. Roast in the preheated oven for about 15 minutes until the vegetables are tender.

Cook Farfalle

Meanwhile, bring a large pot of water to a boil. Add 175 g Farfalle and cook according to package directions.

Prepare garlic paste

Peel the roasted garlic cloves, crush them into a paste in a small bowl and mix thoroughly with the remaining olive oil, lemon zest, Parmesan and parsley.

Roast walnuts

Roast 62.50 g walnuts in a pan over low to medium heat until lightly browned.

Mix and arrange pasta

Add cauliflower-garlic mixture to the pasta and mix gently. Then arrange with additional Parmesan and the roasted walnuts.
