  • 300 g Milk
  • 40 g Sugar
  • 1 Pck. Dry yeast
  • 525 g Wheat flour Type 405 plus some for processing
  • 65 g soft Butter
  • 1 Prise Salt
  • 100 g soft Butter
  • 90 g brown Cane sugar
  • 1.5 EL Starch
  • 2.5 TL Cinnamon
  • 1 Stück Egg for brushing
  • 4 EL Milk
  • 150 g Powdered sugar

Prepare yeast dough

Put milk, sugar and yeast into the mixing bowl and heat for 2 min./37°C/speed 1.

Knead dough

Add flour, butter and salt and knead for 2 min./kneading stage. Transfer to a bowl and cover with a damp towel and leave to rise for about 1 hour until the dough has doubled in size.

Prepare cinnamon filling

For the cinnamon filling, put soft butter, cane sugar, starch and cinnamon in the mixing bowl and mix for 10 sec./speed 4.

Roll out and fill dough

Knead the dough again on a floured work surface and roll out into a large rectangle (approx. 45 x 30 cm). Spread the butter mixture on the dough and roll up from the wide side. Then cut the roll into 12 pieces, place on a baking sheet lined with baking paper or in a baking dish and let rise again for about 30 minutes.

Bake cinnamon rolls

Preheat the oven to 200°C top/bottom heat. Beat the egg with 1 tbsp milk and brush the snails with it, then bake for about 20 minutes until golden brown. Remove from the oven.

Prepare icing

Put powdered sugar with 3 tbsp milk in the mixing bowl and stir for 15 sec./speed 3.

Garnish cinnamon rolls

Serve the cinnamon rolls garnished with icing.
