Description

This citrus herb roasted turkey is a show-stopping centerpiece for any holiday feast. Ingredients (7 ingredients)

  • 1 piece turkey
  • 140 g butter
  • 2 piece thyme
  • 1 piece rosemary
  • 4 piece large onions
  • 3 piece bay leaves
  • 2 tbsp olive oil

Prepare the Turkey

Preheat oven to 180°C (350°F). Pat the turkey dry all over with kitchen paper. Weigh the turkey to calculate the cooking time at 40 minutes per kilogram. This step is done outside of the Thermomix to ensure the turkey is properly prepared for roasting.

Prepare Citrus Herb Butter

Place 140g butter, thyme sprigs, rosemary sprigs, lemon zest, and orange zest into the mixing bowl. Season with salt and pepper. Mix for 10 Sec./Stufe 4.

Butter the Turkey

Gently push your fingers under the turkey’s skin, starting from the neck end of the bird, easing the skin away from the flesh over both the breasts and the tops of the drumsticks. Spread the citrus herb butter under the skin, pushing it in as far as you can, then smooth the skin back into place. This step is done outside of the Thermomix to ensure the butter is evenly distributed.

Prepare the Turkey Cavity

Halve the lemon and orange and put in the turkey cavity along with 2 onion halves and 3 bay leaves. This step is done outside of the Thermomix to prepare the turkey for roasting.

Prepare Onions for Roasting

Place the remaining 2 large onions, quartered, into the mixing bowl. Add 2 tbsp olive oil and 1 tsp salt. Mix for 5 Sec./Stufe 4.

Prepare Turkey for Roasting

Rub turkey all over with the onion mixture from the mixing bowl and sprinkle with salt. Arrange the remaining onions in the bottom of a large roasting tin to act as a trivet for the bird. Sit the turkey on top and completely cover both bird and tin with foil to make a tent. This step is done outside of the Thermomix to prepare the turkey for roasting.

Roast the Turkey

Roast according to your calculated cooking times. Thirty minutes before the end of the cooking time, take out the turkey and turn up the oven to 200°C (400°F). Remove the foil and return to the oven for a further 30 minutes until golden. This step is done in the oven, not the Thermomix.

Check for Doneness

To test whether your turkey is cooked, pierce the fattest part of the thigh with a skewer – the juices that run out should be clear and not pink. Keep cooking if the juices are pink and re-check at 10-minute intervals. If you like your turkey meat almost falling off the bone, then wiggle the leg – it should give slightly if the meat is ready. Keep cooking and basting until it does. This step is done outside of the Thermomix.

Rest the Turkey

Rest the turkey, covered loosely with foil, for at least 30 minutes and up to 1 hour before serving. Strain and reserve the cooking juices and keep the onions in the tin for making gravy. This step is done outside of the Thermomix.
