Description

These Zucchini Coconut Biscuits are a delicious and simple snack for in between meals. They are vegetarian and can be prepared quickly. The biscuits are ideal for anyone looking for a sweet treat with a hint of vegetables. The preparation time is approx. 35 minutes and the recipe is designed for 3 servings.

Ingredients (4 ingredients)

  • 250 g Zucchini (in coarse pieces)
  • 80 g Coconut milk
  • 40 g Desiccated coconut
  • 1.5 tsp Cinnamon

Preparation (3 steps)

Chop zucchini

Put 250 g zucchini in coarse pieces into the mixing bowl and chop for 5 sec./speed 5.

Mix ingredients

Add 80 g coconut milk, 40 g desiccated coconut and 1.5 tsp cinnamon and mix for 10 sec./speed 4.

Shape and bake biscuits

Place the dough as 10-12 dabs onto a baking tray lined with baking paper and bake for approx. 15 min. at 170 °C circulating air and let cool.
