Description

This aromatic beef noodle soup, inspired by the classic Vietnamese pho, is a comforting and flavorful dish perfect for a chilly evening. The rich beef broth, infused with warming spices like cinnamon and star anise, creates a deeply satisfying base for tender rice noodles and thinly sliced sirloin steak. I love how the fresh herbs and a squeeze of lime brighten up the dish, adding a vibrant touch. Ingredients (16 ingredients)

  • 1 l low salt beef stock
  • 1 piece large onion
  • 1 piece large thumb-sized ginger
  • 1 piece cinnamon stick
  • 2 piece star anise
  • 1 tsp coriander seeds
  • 0.5 tsp cloves
  • 230 g sirloin steak
  • 1 tsp palm sugar
  • 1 tbsp fish sauce
  • 1.5 tbsp soy sauce
  • 200 g flat rice noodles
  • 2 piece spring onions
  • 1 piece small red (bird's-eye) chilli
  • 1 handful Thai basil
  • 1 piece lime

Preparation (6 steps)

Prepare the Aromatic Broth

30 min/212°F/Speed 1 100

Pour 1l low salt beef stock and 500ml of water into the mixing bowl. Add the large onion (charred), large thumb-sized piece of ginger (charred), 1 cinnamon stick, 2 star anise, 1 tsp coriander seeds, and ½ tsp cloves. Cook for 30 Min./100°C/Stufe 1.

Strain the Broth

Carefully strain the broth through a fine-mesh sieve into a clean bowl. Discard the solids. Clean the mixing bowl.

Season the Broth

5 min/194°F/Speed 1 90

Pour the strained broth back into the mixing bowl. Add 1 tsp palm sugar, 1 tbsp fish sauce, and 1 ½ tbsp soy sauce. Cook for 5 Min./90°C/Stufe 1 to combine the flavors.

Cook the Noodles

Cook 200g flat rice noodles according to package instructions. Drain well.

Assemble the Pho

Thermomix® Setting
2 min/212°F/Speed 1 100

Divide the cooked noodles between two bowls. Top each bowl with thinly sliced 230g sirloin steak. Bring the broth to a boil in the Thermomix® for 2 Min./100°C/Stufe 1.

Serve

Pour the hot broth into the bowls over the steak (the heat will cook the beef). Top each with sliced 2 spring onions, 1 small red (bird's-eye) chilli slices, and a handful each of Thai basil. Serve immediately with lime wedges for squeezing over.
