This Paraguayan Soup stuffed with meat is a traditional dish that always reminds me of family gatherings. The combination of fresh cheese and corn flour creates a smooth texture and a comforting flavour. The minced meat filling with vegetables gives it a tasty and nutritious touch. It is perfect for cold winter days and to share in special celebrations. Although it takes a little time to prepare, the end result is worth it. Go ahead and try this Paraguayan delight! You can vary the filling with olives or raisins to give it a different touch. It is neither vegetarian nor vegan, but it is very rich in protein.

Ingredients (14 ingredients)

  • 600 g corn flour
  • 300 g fresh cheese
  • Whole Milk
  • 200 g Butter or lard
  • 6 piece eggs
  • Salt
  • 350 g minced meat
  • 1 piece pepper
  • 1 piece onion
  • 1 clove garlic
  • 2 piece tomatoes
  • 2 piece hard-boiled eggs
  • Salt, pepper and cumin
  • Olive oil

Preparation of the vegetables for the filling

Thermomix® Setting
3 sec/Speed 5

Pepper, onion and garlic in small pieces in the glass. Program 3 sec./Level 5 to finely chop.

Sautéed vegetables

Thermomix® Setting
5 min/248°F/Speed 1 120

Add olive oil and program 5 Min./120°C/Level 1 to sauté the chopped vegetables.

Cooking the meat

In a separate pan, sauté the minced meat with salt, pepper and cumin to taste until golden brown. Set aside.

Mixing the filling

Thermomix® Setting
5 min/212°F/Speed 1 100

Add the sautéed meat to the glass with the chopped vegetables and tomatoes. Program 5 Min./100°C/Level 1. Add the chopped hard-boiled eggs and set aside.

Beating the butter and eggs

Thermomix® Setting
20 sec/Speed 3, 30 sec/Speed 4

In the clean glass, place the butter and program 20 Sek./Level 3 to soften it. Then, add the eggs one at a time and beat 30 Sek./Level 4.

Incorporation of cheese and salt

Thermomix® Setting
20 sec/Speed 3

Add the crumbled fresh cheese and salt to taste. Mix 20 Sek./Level 3.

Adding the flour and milk

Thermomix® Setting
1 min/Speed 3

Add the corn flour little by little, alternating with the milk, while beating at speed 3. Program 1 Min./Level 3. The dough should not be too liquid.

Assembly of the soup

Grease a baking dish. Place half of the dough in the dish, then the filling and finally cover with the remaining dough.

Baking

Preheat the oven to 180°C. Bake the soup for 45-60 minutes, or until golden brown.
